Black Olive and Rosemary Focaccia image

Steps:

  • Stir together the water, sugar, and yeast until dissolved, allow to stand for 5 minutes. Stir in 2 tablespoons olive oil, 1/4 cup rosemary, flour, and salt until a dough forms. Turn onto a lightly floured surface, and knead until smooth and elastic, about 10 minutes. Gently knead in the black olives during the last few minutes of kneading. Place into a lightly oiled bowl, cover with a towel, and let rise in a warm place until almost doubled in bulk, about 30 minutes.
  • Preheat oven to 400 degrees F (200 degrees C). Grease a baking sheet, or sprinkle liberally with corn meal.
  • Deflate dough, and press into prepared baking sheet. Brush dough with 1 tablespoon olive oil. Toss sliced tomatoes, and garlic with remaining 2 tablespoons olive oil. Season with 2 tablespoons minced rosemary, salt, and pepper. Arrange the tomato slices over the dough in an even layer. Sprinkle with grated cheese.
  • Bake in preheated oven until puffed and golden brown; 15 to 20 minutes. Cut into squares and serve immediately.

Focaccia Bread Herbed With Black Olive & Fresh Rosemary image

Steps:

  • Cover potato with cold water in medium saucepan.
  • Simmer until potato is tender.
  • Drain, reserving cooking liquid.
  • Mash potato.
  • Meanwhile, sprinkle yeast over 1/2 cup warm (NOT HOT) potato water with dissolved 1 tablespoon sugar in small bowl, mix together.
  • Let stand until the yeast begins to act, about 5 minutes.
  • Add 2 tablespoons of the oil to the yeast mixture.
  • In a food processor add together the flours, potato and salt.
  • Pulse 4 times.
  • With the machine running slowly pour through feed tube the yeast mixture.
  • Adding rest of water to make a ball of dough in the machine.
  • (Be careful not to over add the water) Use only enough water so the dough comes into a ball and away from sides of bowl.
  • Knead for 1 minute in food processor.
  • Turn out on a floured surface, and knead just until smooth.
  • Keep the dough soft.
  • Pour 1/2 teaspoon of the oil into a clean bowl.
  • Place the dough in the bowl, turning once to oil the top.
  • Cover.
  • Let rise until doubled, 30 to 45 minutes.
  • Punch the dough down.
  • Use 1 teaspoon of the oil to coat a baking sheet, and place the dough on the baking sheet.
  • Gently press the dough out to about 1/2 inch thickness.
  • Pour the remaining 1-1/2 teaspoons oil over the top of the dough.
  • Use your knuckle to dimple the dough at 1-1/2 inch intervals.
  • Sprinkle with the rosemary, black olives and the cheese.
  • Place in a cold oven on the center shelf.
  • Place a flat pan of hot water on the shelf below the bread.
  • Let rise until doubled, 20 to 25 minutes.
  • Sprinkle with salt to taste.
  • Turn on the oven to 375°F.
  • Bake the focaccia for 20 to 25 minutes, or until browned on top.
  • Remove from the pan, and cool on a wire rack.
  • Serve warm.

Steps:

  • In a large mixing bowl, combine flour, yeast, 1 tablespoon rosemary and 1 1/2 teaspoons salt.
  • With a wooden spoon, stir in water and 3 tablespoons olive oil; beat mixture vigorously for 5 minutes.
  • Cover bowl with a clean towel and let dough rise in a warm place, away from drafts, until doubled in size (about 40 minutes).
  • Turn dough onto a floured surface and gently knead for one minute.
  • Lightly oil two large baking sheets (I use baking stones).
  • Divide dough in half, placing one half on each baking sheet.
  • Press or roll out each to a 10-inch round.
  • Cover rounds with clean towels and let rise until doubled in size (about 30 minutes).
  • Preheat oven to 400°F.
  • With finger tips, make indentions all over surface of focaccia and brush each round with 1/2 tablespoon remaining olive oil.
  • Sprinkle rounds with remaining rosemary and sea salt.
  • Bake 15 minutes or until golden.
  • Cut in wedges and serve warm.

Steps:

  • Proof yeast, sugar and warm water for 5 minutes in a large bowl.
  • To the bowl add remaining ingredients. Kneed by hand for at least 5 minutes. (If the bowl is large with a flat bottom- you can kneed right in the bowl).
  • Cover dough and let dough rise in warm place for 15 minutes.
  • Punch dough down. Shape dough, add olive oil and salt if desired and then let rise and additional 15 minutes.
  • (Half this recipe fits nicely into an 8x8 pan).
  • Place in 375 degree oven and bake for 20 to 25 minutes. Keep a close eye on this, every oven is different. Cool on a large wire rack.

Steps:

  • Add ingredients for the dough according to bread machine directions.
  • Select dough cycle.
  • Remove dough to lightly floured surface; cover and let rest for 10 minutes.
  • Grease a 13x9 inch pan and sprinkle with cornmeal.
  • Press dough evenly in pan.
  • Drizzle with oil, and scatter remaining topping ingredients evenly over dough.
  • Cover with towel and let rise in warm place until doubled, 30-40 minutes.
  • Poke deep holes with finger in risen dough about 1 inch apart.
  • Bake at 400ºF on lower oven rack for 20-25 minutes, or until golden.

Steps:

  • To Make the Dough: Place the flour, yeast, and salt in a bowl and mix for a few with the hook of a stand mixer (or by hand). Pour in the oil and water and process with the dough hook and knead until ingredients are fully incorporated and pliable. (If mixture is too wet to form a ball, add a bit more flour. If too dry, add a few drops of water.) Continue to knead for about 45 seconds to form a ball and dough is smooth.
  • Place dough in a lightly oiled mixing bowl and turn dough to oil the top. Cover and let rise in a draft-free area for approximately 1 hour or until doubled in bulk.
  • Meanwhile, steep the garlic in the 1/4 cup olive oil over low heat until warm, being careful not to let oil come to a boil, being careful to NOT burn garlic. Remove from stove top and set aside.
  • Preheat oven to 425-degrees F.
  • Sprinkle a large baking sheet with the cornmeal.
  • Once dough has doubled in size, punch dough down and roll or pat on a lightly floured surface to an approximate 11 x 17-inch rectangle about 1/4 inch thick and place in the prepared pan (if you don't have a pan that is 11 x 17-inch rectangle, divide the dough into 2 smaller size rectangle pans.) Use your thumb to make several light dimples or indentations in the dough. Gently brush with 3 tablespoons of the flavored olive oil, then cover with a layer of thinly sliced tomatoes. Sprinkle with scallions, cheese, and rosemary. Dribble with remaining 1 tablespoon oil.

Steps:

  • Place 1 cup plus 3 tablespoons water, 1 tablespoon olive oil, bread flour, white sugar, 1 teaspoon salt, and active dry yeast, respectively, in the pan of a bread machine. Select pizza cycle; press Start.
  • Combine crushed garlic and 1/3 cup olive oil in a small bowl. Set aside to let it steep, about 30 minutes.
  • Combine Parmesan cheese, parsley, onion powder, and herbes de Provence in another small bowl.
  • Preheat oven to 425 degrees F (220 degrees C). Grease a large rimmed baking sheet with olive oil.

To do this without tearing the dough, reach hands underneath and gently pull it towards the outside. At this point, it will probably shrink back a bit, but that’s okay. Drizzle it olive oil and cover with plastic wrap. Let it rest for 30 minutes.
