EVERYTHING JAMBALAYA
Although I was "not an easy child," my Cajun daddy says there are many reasons he loves me. I think this recipe may be at the top of a very short list!

Steps:
- Cook rice to package directions.
- Place a large, deep skillet over medium high heat. Add oil and butter to the pan. Cube chicken and place in hot oil and butter. Brown chicken 3 minutes, add sausage, and cook 2 minutes more. Add onion, celery, pepper, bay, and cayenne.
- Saute vegetables 5 minutes, sprinkle flour over the pan and cook 1 or 2 minutes more. Stir in tomatoes and broth and season with cumin, chili, poultry seasoning, and Worcestershire. Bring liquids to a boil and add shrimp.
- Simmer shrimp 5 minutes until pink and firm. Remove the pot from the heat and place on a trivet. Ladle jambalaya into shallow bowls. Using an ice cream scoop, place a scoop of rice on to the center of the bowlfuls of jambalaya. Sprinkle dishes with salt, pepper, chopped scallions, and thyme leaves.

- Heat 1 tablespoon of peanut oil in a large heavy Dutch oven over medium heat. Season the sausage and chicken pieces with Cajun seasoning. Saute sausage until browned. Remove with slotted spoon, and set aside. Add 1 tablespoon peanut oil, and saute chicken pieces until lightly browned on all sides. Remove with a slotted spoon, and set aside.
- In the same pot, saute onion, bell pepper, celery and garlic until tender. Stir in crushed tomatoes, and season with red pepper, black pepper, salt, hot pepper sauce, Worcestershire sauce and file powder. Stir in chicken and sausage. Cook for 10 minutes, stirring occasionally.
- Stir in the rice and chicken broth. Bring to a boil, reduce heat, and simmer for 20 to 25 minutes, or until liquid is absorbed.

- In a 5 quart slow cooker, combine the tomatoes, broth and tomato paste.
- Stir in the green peppers, onion, celery, garlic and seasonings.
- Stir in chicken and sausage.
- Cover and cook on low for 4 hours or until chicken is tender.
- Stir in shrimp.
- Cover and cook 15-30 minutes longer or until shrimp turn pink.
- Serve with rice.
LEGENDARY JAMBALAYA
Steps:
- Heat a large, heavy, dry stockpot or Dutch oven over high heat. Add 1 tablespoon peanut oil, and then brown the sausage. Remove the sausage from the pan, and reserve the drippings. Add another tablespoon peanut oil, and then brown the chicken, adding more peanut oil, if necessary.
- Return the sausage to the pan with the chicken, and add the onion, celery, garlic, and pepper. Saute until the meats and the vegetables are cooked through. Add the tomatoes and the hot sauce, and stir with a wooden spoon to combine. Add the file powder and the Cajun spice, reduce the heat to low, and simmer for at least 1 hour. Serve over cooked, steamed rice.

- Place the chicken in the bottom of the slow cooker, then top with the sausage. In a medium-sized mixing bowl, combine the tomatoes, stock, tomato paste, and seasonings; add the diced vegetables to mixture. Pour the tomato mixture over the chicken and sausage in the slow cooker.
- Once the slow cooker has finished, there are a couple of options with the rice: 1. Ladle out as much of the liquid out as possible - but saving the liquid. Once I have all the liquid out that I can get with the ladle, with oven mitts, I carefully pull out the insert and drain the remaining liquid. I then cook the rice, according to the package instructions, using the reserved liquids from the slow cooker. TIP: I place the container to catch the liquids in the sink and use the edge of the sink to help support the insert. I use a strainer to catch any of the bigger pieces that happen to fall out of the slow cooker while it is tilted. 2. Cook the one cup of rice separately. When the rice is done, fold the cooked rice into the slow cooker. 3. You can use instant rice with 30-minutes remaining. Make sure that the rice is well mixed with the other ingredients before covering the slow cooker.
- {Optional Step} After the rice is added, with 30-minutes of cooking time remaining, this is the point you would add thawed shrimp to the slow cooker.

- In a large heavy pot, heat the olive oil on medium, and add the sliced sausage; saute until the sausage has slightly browned and the edges have a crisp to them. Once done, remove with a slotted spoon. Add the chicken to the pot and saute until the chicken is no longer pink and mostly cooked through; about 5 minutes.
- Add the onions, green bell peppers, celery, and garlic to the pot with the chicken and saute for 5 minutes.
- Return the sausage to the pot along with the can of Rotel tomatoes and juices, tomato paste, seasonings, chicken stock, rice and stir to combine. Reduce the heat to low, cover and simmer for 25 minutes.
- Once the rice is tender, if you're adding raw shrimp to the meal, combine the shrimp into the jambalaya making sure that they are covered; cover the pot and cook for an additional 10 minutes, or until the shrimp have turned a pink color.
