EASIEST EVER FRUIT COBBLER

This is the quickest, easiest and best ever cobbler versatile enough for any canned fruit. We like it best with peaches. Serve warm. Best topped with vanilla ice cream!

Easiest Ever Fruit Cobbler image

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 2-quart baking dish.
  • Stir together peaches and juice with melted butter. Pour into prepared pan. In a small bowl mix flour, sugar and salt. Stir in milk. Pour mixture over peaches.
  • Bake on bottom rack of preheated oven 15 minutes, or until lightly browned, then move to top rack for 20 minutes more. Serve warm.

My son took first place in a baking contest with this one. Serve warm or cold plain, with ice cream or whipped cream. When I use apples, a sprinkle of cinnamon or apple pie spice makes a nice touch. In place of peaches, try using apples or plums.

Steps:

  • Melt butter or margarine in a 9 x 13 inch pan. Set aside to cool.
  • Stir together flour, sugar, salt, and baking powder. Mix in milk and vanilla. Pour batter over melted butter. DO NOT MIX OR STIR. Spoon fruit with juice over the batter. DO NOT MIX OR STIR.
  • Bake at 350 degrees F (175 degrees C) for 55 minutes.

  • Preheat oven to 350°. Arrange fruit evenly in the bottom of a 13-in. x 9-in. greased baking dish. , In a bowl, combine flour, sugar, baking powder and salt; cut in butter until crumbly. Steps:

  • 1. Preheat oven to 325.
  • 2. Scatter the fruit in an 8x8 baking dish. Combine sugar and cornstarch and sprinkle over fruit.
  • 3. To prepare crust, combine the flour, baking powder and baking soda in a small bowl and set aside.
  • 4. In a medium bowl, combine the butter and sugar. Stir in egg. Gradually add the flour mixture. The batter will seem quite stiff.
  • 5. Drop the batter, one spoonful at a time, over the top of the fruit. The batter will settle into the fruit as it bakes.
  • 6. Transfer the cobbler to the oven and bake for 60 minutes, or until the top is lightly browned and cooked through.

BERRY FILLING
4 c frozen berries (i used blueberries and raspberries)
1/2 c sugar
2 Tbsp cornstarch
DOUGH TOPPING
4 oz butter softened (1 stick)
3/4 c sugar
1 egg, lightly beaten
1 c flour
1 tsp baking powder
1/2 tsp baking soda

Easy weeknight desert can be cooked while eating dinner. You can double the fruit, but it may take more time to cook. Also good to add cinnamon &/or nutmeg to the batter, depending on your taste.
