APPLE CRUMB BARS
This has been a favorite apple bar recipe of mine for many years. I've made these apple crisp bars for parties and for family, and they're always a hit. -Barbara Pickard, Union Lake, Michigan

Steps:
- In a large bowl, combine the flour, oats, brown sugar and baking soda; cut in 1 cup plus 2 tablespoons butter until mixture resembles coarse crumbs. Set aside 2 cups for topping. Press remaining crumbs into a greased 13x9-in. baking dish. Arrange apples over top; set aside. , In a saucepan, combine the sugar, cornstarch, water, vanilla and remaining butter. Bring to a boil. Cook and stir for 2 minutes or until thick and bubbly; spread over apples. Sprinkle with reserved crumbs. , Bake at 350° for 35-45 minutes or until top is lightly browned.

FRESH APPLE COOKIES/BARS
I have had this recipe in my file for a number of years, I don't know the origin. My family loves the flavor but the cookies are hard to make and handle so I turned it into bars. The bars are much easier to make and handle. We most often omit the glaze because it can be too sweet; although powdered sugar sprinkled on the cooled bars would dress them up for guests.

Steps:
- Glaze: Blend with spoon until smooth.
- Preheat oven to 375°.
- Sift flour and baking soda together, set aside.
- Cream butter and sugar with electric mixer.
- Blend in salt, spices, and egg.
- Add half the flour mixture and blend well.
- Blend in half the apple cider.
- Add the chopped apples to the remaining flour mixture and stir to coat.
- Add this and the remaining apple cider to the creamed mixure and stir by hand.
- For cookies: Drop by VERY small spoonful on cookie sheet and bake 8-9 minutes.
- Remove from sheet while still warm (be very careful they are very hard to handle) and glaze while barely warm.
- For bars: Spread in a 9x13 pan that has been sprayed with cooking spray.
- Bake 20-25 minutes or until they test done with toothpick.
- Cut while barely warm.
APPLE SQUARES
Apples, nuts and cinnamon make these bars delicious. They hardly last a day at my house!

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch pan. Sift together flour, baking powder, salt, and 1/4 teaspoon of cinnamon; set aside.
- In a large bowl, mix together melted butter, brown sugar, and 1/2 cup of white sugar with a wooden spoon until smooth. Stir in the egg and vanilla. Blend in the flour mixture until just combined, then stir in the apples and walnuts. Spread the mixture evenly into the prepared pan. In a cup or small bowl, stir together the remaining cinnamon and sugar; sprinkle over the top of the bars.
- Bake for 25 to 30 minutes in preheated oven; finished bars should spring back when lightly touched. Cool in the pan, and cut into squares.

APPLE PIE THUMBPRINT COOKIES
A spiced apple filling tops these buttery cookies, packing all the flavor of an apple pie into a single bite -- for a fraction of the work!

- Toss together the apples, lemon juice, apple pie spice, vanilla and 1/3 cup of the sugar in a medium bowl. Melt 2 tablespoons of the butter in a medium skillet over medium heat. Add the apple mixture and stir to coat with the butter. Cover and cook, stirring occasionally and adding about 1/4 cup water if the mixture becomes too dry or begins to brown, until the apples are tender and shiny, about 20 minutes. When the apples are tender, there should be some liquid left in the skillet; if not, add 1/4 cup water and stir. Mix the cornstarch with 1 teaspoon water in a small bowl and pour it into the apple mixture. Stir well and bring the mixture to a boil to activate the starch. Cook until thick and bubbly, 30 seconds to 1 minute more. Transfer to a bowl and refrigerate for 15 minutes.
- Whisk together the flour and salt in a bowl. In another bowl, beat the remaining 8 tablespoons butter and 2/3 cup sugar with an electric mixer on medium-high speed until fluffy, about 5 minutes. Beat in the egg until just combined. Turn the mixer to low and gradually beat in the dry ingredients in 2 additions, beating until just incorporated.
- Line 2 baking sheets with parchment. Scoop 1-tablespoon portions of dough and roll between your hands to form 1-inch balls. Place about 2 inches apart on the prepared baking sheets. Gently press a thumbprint into the center of each ball about 1/2 inch deep, being careful not to crack the edges. Fill each indentation with 1 teaspoon of the filling, then chill the cookies 15 minutes in the freezer.
- Position oven racks in the top and bottom thirds of the oven and preheat to 350 degrees F.
- Bake, rotating the baking sheets from top to bottom and front to back about halfway through, until the cookies are set, about 30 minutes. Cool the cookies completely on the baking sheets. Store the cookies in an airtight container in the refrigerator for up to 5 days.

BEST APPLE BARS
VERY MOIST!! Popular apple bars with carmel frosting! The absolute best of all the apple recipes I have ever tried. Grating the apples helps let the apple juice ooze out and give flavor. Always a WINNER. So yummy you'll smack your lips!! A good item to have with your coffee at snack time!

- Cream butter and sugar. Add beaten egg and mix well. Add vanilla.
- In a separate bowl combine flour, baking soda, salt, nutmeg and cinnamon. Add to creamed mixture. Add grated apples.
- Pour mixture into a greased 9 x 9 inch baking pan. Bake in a 350 degree oven for 30 minutes.
- For frosting: Bring brown sugar, butter and milk to a boil. Boil only 2 1/2 minutes. Remove from heat and add sifted powdered sugar while stirring. Cool slightly and spread on bars. Sprinkle chopped pecans on top.
- Cool completely and cut into bars. Store in air-tight container to retain moisture.
- Note: If you prefer sweeter, add 1/4 cup sugar to batter of bars, but remember the apple juice from the grated apples will provide some sweetness. We enjoy it as is because the carmel frosting is sweet. Also, we have had them with no frosting and just a sprinkling of powdered sugar on top. Enjoy!

FRESH APPLE COOKIES
This recipe has been in my recipe box for years so I'm not sure where it came from. They're a nice, light cookie that is similar to a snickerdoodle.

Steps:
- Preheat oven to 350 degrees.
- Cream together sugar, shortening & vanilla.
- Add in grated apple.
- Sift together dry ingredients.
- Add gradually to creamed mixture, combining thoroughly.
- *If dough appears slightly dry and doesn't come together, let it sit for a few minutes to allow the sugar to pull the juice from the apples.
- Roll in walnut-sized balls and roll in mixture of 2 Tbsp sugar, 1/2 tsp nutmeg and 1/4 tsp cinnamon.
- Bake 8-10 minutes on aluminum foil or parchment, until cookies are golden brown and appear crackled.
- Let cool on cookie sheet 4-5 minutes before transferring to cooling rack.
