Fresh Mint Chocolate Chip Cookies Recipes
FRESH MINT CHOCOLATE CHIP COOKIES
Found this recipe in an old cook book some time ago. This is the perfect cookie for late summer - the fresh mint has a wonderful cooling effect. I finally found the mint chocolate chips at Trader Joe's. The fruit pectin is optional, but really helps to give the cookies extra chewiness and extends their shelf life by several days.

Steps:
- Heat oven to 350 degrees.
- Combine dry ingredients. Set aside.
- With an electric mixer, combine sugar and butter until well blended.
- Mix in egg and fresh mint until well combined.
- Slowly combine the dry ingredients until well mixed.
- Fold in the mint chocolate chips.
- Refrigerate for 20 minutes.
- Scoop onto cookie tray. Bake 14 - 15 minutes.
- Let cool for a few minutes, then transfer to cooling racks.
- This dough also freezes well. Scoop into individual cookie servings then place in freezer. Bake at 350 for 17-18 minutes if frozen.

Steps:
- Preheat oven to 350°F.
- Raise oven rack one level above middle.
- Blend butter, sugars, baking soda, baking powder, vanilla and eggs until mixed.
- Stir in Andes baking chips.
- Add flour.
- Chill dough overnight.
- Measure out approximately 1 ounce of dough.
- Form into ball, flatten slightly.
- Place dough onto parchment lined baking sheets.
- Bake for 8-10 minutes.
- Allow to cool on pans for two minutes before removing.
- Finish cooling on wire racks.

- Melt the butter in a small saucepan over low heat. Remove from the heat and add the mint leaves. Allow the mint leaves to steep in the warm butter for 30 minutes.
- Pour the melted butter and mint leaves into a blender and process until smooth. About 1 minute.
- Add the butter/mint mixture to the bowl of your stand mixer. Add the brown sugar and granulated sugar and beat with the paddle attachment on medium speed until smooth. Lower the mixer speed to stir and add in the egg, egg yolk, and vanilla. Mix until thoroughly combined, about 30 seconds.
