JACKIE'S FRESH PEACH COBBLER
An old fashion recipe from a collection of my mother's favorites. With a dash of nutmeg the aroma will take you back to grandma's kitchen.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Pour butter into an 8-inch square baking dish.
- Combine peaches and 3/4 cup sugar together in a bowl. Whisk flour, remaining sugar, baking powder, salt, and nutmeg together in a bowl; stir in milk just until batter is combined. Pour batter over butter and top with peaches.
- Bake in the preheated oven until cobbler is golden brown, 45 to 50 minutes.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Combine 1/2 cup sugar, cornstarch, and cinnamon in a saucepan and whisk to mix. Stir in sliced peaches (see Editor's Note) and lemon juice, tossing until peaches are evenly coated.
- Cook filling over medium heat, stirring constantly, until mixture thickens and boils. Boil 1 minute. Pour mixture into an ungreased 2-quart casserole dish. Keep mixture hot in oven while you make the topping.
- In a medium bowl combine flour, 1 tablespoon sugar, baking powder, and salt. Mix thoroughly, then cut in shortening until mixture looks like fine crumbs. Add milk and stir until mixture is evenly moistened.
- Remove peach filling from oven and drop dough onto peaches in 6 equal-size spoonfuls.
- Return cobbler to oven and bake until topping is golden brown, 25 to 30 minutes.

PEACH COBBLER

- Preheat the oven to 325 degrees F.
- Place the peaches in a 9-by-9-inch baking pan. In a medium bowl, mix together the flour, 3/4 cup of the sugar, the baking powder and 1/2 teaspoon of the salt. Add the milk and melted butter and mix well. Pour the batter evenly over the peaches.
- In a small bowl, mix together the remaining 1/4 cup sugar, the cornstarch and remaining 1/2 teaspoon salt. Sprinkle the mixture over the batter. Evenly pour the boiling water all over.
- Bake until golden brown and bubbling, 50 minutes. Serve in individual dessert dishes with vanilla ice cream or whipped cream, if desired.
FRESH SOUTHERN PEACH COBBLER
I've been experimenting with cobbler for some time and this recipe is the final result. Loved by all. Use fresh Georgia peaches, of course!

- Preheat oven to 425 degrees F (220 degrees C).
- In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly, and pour into a 2 quart baking dish. Bake in preheated oven for 10 minutes.
- Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt. Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal. Stir in water until just combined.
- Remove peaches from oven, and drop spoonfuls of topping over them. Sprinkle entire cobbler with the sugar and cinnamon mixture. Bake until topping is golden, about 30 minutes.

- Heat oven to 375 degrees F.
- In a large bowl, combine flour, 4 T granulated sugar, baking powder, and salt.
- Use a fork, 2 knives, or a pastry blender to cut in butter until mixture resembles coarse meal.
- Whisk together the egg and cream in a liquid measuring cup.
- Slowly add this mixture to dry ingredients; mix with a fork until dough just comes together.
- Turn dough out onto a lightly floured board and roughly shape into a 12-inch log.
- Using a bench scraper cut log into 12 equal portions.
- Place the peaches, cornstarch, dark brown sugar, and cinnamon in a large bowl.
- Toss until well combined.
- Pour mixture into an 8 1/2 by 11 1/2-inch baking dish.
- Place rough balls of dough on top of peach mixture.
- Sprinkle with remaining 2 tablespoons granulated sugar.
- Bake until golden brown, about 45 minutes.
- Remove to a rack and let cool slightly.
- Serve with vanilla ice cream or whipped cream.

- Batter: Combine 2 cups flour, 1 cup sugar, baking powder, and salt in food processor.
