Crunchy on the outside and creamy on the inside, our satisfying, deep-fried black-eyed peas are seasoned to perfection and ready in only 10 minutes.

Seasoned Deep-Fried Black-Eyed Peas image

Steps:

  • In deep 2-quart saucepan, heat oil to 325°F. Line plate with layers of paper towels to absorb oil after cooking peas.
  • Carefully place peas in hot oil; cook 3 to 4 minutes.
  • Using wire strainer or skimmer, transfer peas to plate. Immediately sprinkle with seasoning.

Fried Black-Eyed Peas image

Steps:

  • Soak peas in a bowl of cold water for 3 hours. Drain, and pat dry. Whisk together sugar, 1 tablespoon salt, and the pimenton.
  • Heat oil in a large heavy pot over medium heat until it reaches 375 degrees on a deep-fry thermometer. Working in batches, fry peas until golden and crisp, 5 to 7 minutes. Transfer to a paper-towel-lined tray. Drain for about 30 seconds. Immediately transfer peas to a large bowl, and sprinkle with sugar mixture. Toss lightly to coat.

Black-Eyed Pea Fritters image

Steps:

  • Preheat oven to 350 degrees F.
  • Heat 1 tablespoon of the coconut oil in a large skillet over medium heat. Add the onion, red pepper and garlic and saute until soft, about 3 minutes. Reduce the heat to low, add 2/3 of the black-eyed peas and mash all the ingredients together with a potato masher. Remove from the heat and cool slightly.
  • Add the flour, egg, green onion, oregano, lemon zest, cayenne, and 1/4 to 1/2 cup breadcrumbs to the pea mixture. Fold in the cheese and remaining black-eyed peas. Season with salt and pepper.
  • Place the remaining breadcrumbs in a shallow bowl. Divide the batter into 12 portions using a 1 1/2-ounce portion scoop. Press into flat 1/2-inch-thick discs and coat in the remaining breadcrumbs.
  • Wipe out the skillet. Heat the remaining oil and, in batches, sear the fritters until golden brown, about 2 minutes per side. Place on a baking sheet and finish cooking in the oven until cooked through, 15 to 20 minutes.
  • Top with the onion jam and garnish with the green onions.
  • Melt the butter in a large saute pan over medium-high heat. Add the onions, lemon zest, ginger, and 1/2 teaspoon salt and cook until the onions start to turn translucent, about 5 minutes
  • Add the coriander, 1/4 cup of the brown sugar and half the lemon juice and turn the heat to low. Cook, stirring frequently, until the onions start to cook down and the liquid is evaporated, about 15 minutes. Add 1/3 cup water every 10 minutes and continue to cook until the onions are thick and golden brown, about 55 minutes. Stir in the remaining 1/4 cup brown sugar and the lemon juice and cook until the brown sugar melts, 3 to 5 minutes more. Season to taste.

1 medium Vidalia onion, small dice (about 1 1/2 cups)
1/2 red bell pepper, small dice (about 1/2 cup)
1 clove garlic, minced
Two 15.5-ounce cans black-eyed peas, rinsed and drained
1 tablespoons all-purpose flour
1 large egg
1 large green onion, green part chopped, plus more for garnish
1 tablespoon chopped fresh oregano
1 teaspoon lemon zest
1/2 teaspoon cayenne pepper
1 cup fresh breadcrumbs
1/3 cup coconut oil
3/4 cup shredded firm aged sheep or goat cheese, such as Singing Brook from Blackberry Farm
Kosher salt and freshly ground black pepper
Onion Jam, recipe follows, for serving
1 1/2 teaspoons unsalted butter
2 Vidalia onions, julienned (if not in season, any sweet onion will do)
2 lemons, zested and juiced
1/4 teaspoon minced fresh ginger
Kosher salt
1/2 cup firmly-packed brown sugar
1/4 teaspoon ground coriander
Freshly ground black pepper

Steps:

  • In a large, deep frying pan, heat about 1/2-inch of oil to 350 degrees F.
  • Mash cooked peas in a large mixing bowl. Add remaining ingredients and mix well. Shape into fritters, whatever size you desire. Carefully add fritters to the hot oil and fry until golden on 1 side. Carefully turn fritters over and continue frying until golden on the second side and cooked through in the middle. Remove and let drain on paper towels. Serve.

Oil, for deep frying
1 1/2 pounds black eyed peas, cooked (canned works equally as well)
2 large eggs, beaten
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup all-purpose flour
1 small to medium onion, minced
1/4 teaspoon baking soda

Steps:

  • 1. Start out by chopping all of you vegetables( LARGE pieces). These pieces will be removed later.
  • 2. Open can of Peas, and rinse well. In a medium pot * add veggies and peas * bring to a boil for 10 minutes * cut off heat * let sit for an 1 Hour to cool ( lid off ) * REFRIGERATE OVER NIGHT
  • 3. * heat oil * Remove veggies from liquid * strain water from peas * let dry on paper towels
  • 4. * carefully began to fry peas in oil ( until skin on peas burst and crispy) * season to taste with Obay Seasoning & salt ENJOY ! *(hint) BACON MAKES EVERYTHING BETTER; I bet you cant stop eating them.

Black-Eyed Pea Patties image

Steps:

  • Saute the chopped onion in a bit of oil until translucent, then remove.
  • In a large bowl, combine all ingredients (including the sauteed onion).
  • Mash mixture (I use a large fork) until about half of the peas are completely mashed.
  • Mold into patties about 2-3 inches across and 3/4 to 1 inch thick.
  • In a skillet, heat about 1/2 inch oil on med-high.
  • When the oil is hot, add patties.
  • Cook until a medium brown crust forms on bottom (2-3 minutes), then turn and repeat.
  • Remove to paper towel to absorb grease.
  • Drizzle Ranch Dressing and your favorite barbecue sauce over the tops and serve.

DEEP FRIED BLACK EYED PEAS Y'all! image

Steps:

  • 1. Either the night before or early the same morning rinse and pick through the black eyed peas (to get the bad beans out) and put B.E.Ps in a large bowl or pot and cover with water. Water should be at least 3-4 inches above the B.E.Ps. Cover and set aside for at least 8 hours. Or over night. All you are doing is soaking your beans or peas to give them a head start on cooking and to make cooking of the beans more even through out them.
  • 2. After beans have soaked for the time needed drain and rinse beans and put them in a heavy bottom pot. Cover beans with 2 inches of cold tap water.
  • 3. Quarter onion, half and seed jalapeno (if using it) peel garlic, and grab a bay leaf and toss in the pot. Add powdered ham seasoning, salt and pepper (use more or less s&p to your taste)
  • 4. Put B.E.Ps on stove top and heat on high until they start to boil and then reduce heat to a simmer (that is medium low on my stove) and cover pot lid set cockeyed so peas can vent well. ADD water as needed to keep liquid in them.
  • 5. Cook B.E.Ps for 30-40 minutes until done. Peas when done will be firm but when you bite into them they will be creamy. Don't over cook or the peas will not fry they will just make a mush pile!
  • 6. Once done strain peas in colander let drain for 5 minutes and then spread them on a sheet pan lined with paper towels or a dish towel and cool completely in fridge. Remove onion pepper and bay leaf. Leave in fridge until ready to fry.
  • 7. Heat oil in pan to 350 degrees add 1 to 1 1/2 cups cooked, cooled peas to hot oil and fry for 3-5 minutes until crispy. If you over cook to much they become hard through and not as good as when soft in the middle.
  • 8. Once cooked to crispy remove peas and drain on paper towels. Draining should only take about 1-2 minutes. Put drained peas in a bowl and sprinkle with Cajun Seasoning and a pinch of salt, toss to lightly coat peas and put them into serving dish.
  • 9. Repeat until all the peas are fried. **This is the seasoning I use on the Peas :)
  • 10. **This is the Ham flavoring I use when boiling the Peas. Sit back and chow down with a good movie! BUT mostly just ENJOY!!! Happy Cooking!
  • 11. I make these for breakfast! Deep Fried Black Eyed Peas, Hash Browns, Bacon and a Over Medium Egg is awesome together! When that warm yolk hits the Peas and other goodies it is AWESOME!

1 lb dry bagged black eyed peas
1 large onion quartered
3 clove garlic
1-2 jalapenos (optional) cut in half length wise and seeded
1 bay leaf
2 Tbsp ham flavored seasoning~optional (try to find this it really pops the flavor!)
1 Tbsp salt
1 Tbsp pepper

oil for deep frying
cajun seasoning (i recommend slap ya mama or tony chachere's spice n' herbs)
