BIG-BATCH RICE

This simple, large batch of seasoned rice can be frozen and repurposed in endless ways for easy, family-friendly meals.

Steps:

  • Bring 18 cups water to a boil in a large covered pot over high heat. Stir in salt and vinegar. Add rice, reduce heat to medium, and bring to a simmer. Cook, stirring occasionally, until rice is cooked through but not mushy (taste it: it should still be slightly al dente), 10-20 minutes, depending on variety of rice. Working in batches if needed, strain through a fine-mesh strainer.
  • If not serving immediately, spread rice in an even layer on a rimmed baking sheet and let cool. Transfer to resealable freezer bags, pat down into an even layer (so it defrosts more quickly), and freeze up to 4 months. To defrost, transfer frozen rice to a microwave-proof bowl and sprinkle with a bit of water. Cover and microwave rice on high in 1-minute bursts until warmed through. Alternately, place rice in a saucepan and add a splash of water. Cover and cook over low heat, stirring occasionally and adding more water if needed, until warmed through. If using in a soup, add frozen rice directly to soup and cook until heated through.

1 Tbsp. plus 1½ tsp. kosher salt
1 Tbsp. distilled white vinegar or rice vinegar

  • Use the Right Rice (Almost Any Rice) Perfect fried rice is all about texture. I was looking for rice that had distinct grains, each with a slightly chewy fried exterior and a tender bite.
  • Plan in Advance if You Can, But Don't Worry if You Don't. I'd always heard that fried rice is best made with day-old rice, and that fresh rice will turn to mush if you try to fry it.
  • Rinse the Rice. This was an obvious one: Excess starchiness is what causes rice to clump. Nobody likes clumpy fried rice. If you are cooking your rice from raw in order to make fried rice, make sure to rinse off excess starch first.
  • Break Up the Rice. If you're using rice that has had a chance to clump or go stale, break it up before it goes into the wok. This will ensure that the rice separates into individual grains without breaking or getting crushed.
  • Use a Wok. While it's true that woks were not designed to be used on Western-style gas ranges, with their rings of burners, they are still far superior vessels for stir-frying than a skillet or saucepan.

  • Make a Savory Sauce. Fried rice comes together quickly, so make sure you have all your ingredients prepped and measured before cooking. That includes the sauce that you’ll stir in at the end to season the fried rice (because it’s not traditional to season the fried rice with salt and pepper).
  • Choose Quick-Cooking, Delicate Vegetables. Yep, fried rice is great for using up whatever vegetables you have hanging around the refrigerator. But it’s important to be strategic and choose vegetables that cook at the same right, and that cook pretty quickly — otherwise you’ll be standing over the stove for hours.
  • Cook Veggies and Meat Over High Heat in Batches. It’s tempting to add all of the ingredients to the skillet at the same time, but resist the urge. Cooking the meat, veggies, eggs and rice separately takes just a few extra minutes and ensures non-soggy results.
  • Scramble the Eggs with Nothing Else in the Skillet. Add a bit of oil to the skillet (which should still be over high heat), add some beaten eggs (1 egg per every 1 cup of rice is a safe bet) and scramble them vigorously just about 10 seconds (really, that’s it!)
  • Add Day-Old Rice (Leftovers!) to the Skillet and Cook Until Crisp. Have you ever made fried rice that’s rather... mushy? Or wet? No good. Leftover rice is fantastic for fried rice because it’s drier than freshly made rice.
