FRITO PIE

Frito pie is legendary in the Southwest for being spicy, salty and cheesy fabulous. Here's my easy take on this crunchy classic. -Jan Moon, Alamogordo, New Mexico

Steps:

  • Preheat oven to 350°. In a large skillet, cook beef and onion over medium heat 6-8 minutes or until beef is no longer pink and onion is tender, breaking up beef into crumbles; drain. Stir in beans; heat through., Reserve 1 cup corn chips for topping. Place remaining corn chips in a greased 13x9-in. baking dish. Layer with meat mixture, enchilada sauce and cheese; top with reserved chips., Bake, uncovered, 15-20 minutes or until cheese is melted. If desired, sprinkle with green onions.

2 cans (15 ounces each) Ranch Style beans (pinto beans in seasoned tomato sauce)
1 package (9-1/4 ounces) Frito corn chips
2 cans (10 ounces each) enchilada sauce
2 cups shredded cheddar cheese
Thinly sliced green onions, optional

FRITO CHILI PIE

A great quick meal that was a favorite in my family when I was growing up and that my kids love too! Recipe has been adjusted to 2 cans of chili as suggested by reviewers. I normally use one and don't use the entire bag of fritos. You can adjust the chili to frito ratio to your taste. More chili is always good.

Steps:

  • Preheat oven to 350 degrees.
  • Spray a square casserole dish with nonstick cooking spray.
  • Line the bottom of casserole dish with tamales.
  • Top tamales with a thin layer of corn chips.
  • Spread 1 can of chili on top of corn chips.
  • Top chili with 1 cup cheese and 1/2 cup of chopped onion.
  • Add another layer of corn chips.
  • Cover with remaining chili.
  • Top chili with remaining cheese and onions.
  • Bake 30 minutes.

1 (10 ounce) bag Fritos corn chips
2 (15 ounce) cans chili
1 (15 ounce) can tamales
2 cups cheddar cheese (grated)
1 cup onion (finely chopped)

  • In 12-inch nonstick skillet, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until no longer pink; drain. Reduce heat to medium; stir in taco seasoning mix, diced tomatoes and chili beans. Cook 2 to 3 minutes or until heated through; stir in 1 1/2 cups of the cheese. Remove from heat.
  • Unroll crescent dough; press in bottom and 1/2 inch up sides of baking dish. Spread beef mixture on top of crescent dough. Bake 20 minutes; top with remaining 1/2 cup cheese and the corn chips. Bake 5 to 7 minutes or until dough is deep golden brown and cheese is melted.

  • Make the Chili: Heat the oil in a large Dutch oven over medium heat until it is shimmering. Add the onions, bell pepper, chili powder, cumin, cayenne and ½ teaspoon of the salt. Cook until the vegetables have softened, about 7 minutes. Stir in the garlic and cook for another 30 seconds.
  • Add the beef and increase the heat to medium-high. Cook, breaking up the beef with a wooden spoon, until no longer pink, about 10 minutes. Stir in the beans, diced tomatoes (with their juice), tomato puree and the remaining ½ teaspoon salt. Bring to a simmer, then reduce the heat so it maintains a slow simmer, cover and cook for 45 minutes.
  • Remove the lid and continue to simmer for an additional 45 minutes. Season with additional salt and pepper to taste.
  • Assemble the Frito Pie: Preheat oven to 375 degrees F. Transfer some or all of the chili to a baking dish or individual ramekins. Top with Fritos, pressing them lightly into the chili. Sprinkle cheddar cheese over the top and bake until the cheese is melted and the chili is bubbling, about 30 minutes. Sprinkle with sliced green onions and serve immediately.
