BANANA FRITTERS
These great little fritters are a breakfast favorite.

Steps:
- In a mixing bowl, combine the milk and bananas. Sift in the flour, salt, and baking powder. Thoroughly mix in the eggs and margarine.
- Heat the oil in a large skillet to 365 degrees F (180 degrees C).
- Carefully place spoonfuls of the mixture into the hot oil and fry until brown. Flip the fritter and continue to brown. Remove fritters from the oil and drain on paper towels. Dust the fritters with confectioners' sugar and serve while warm.

Very Quick, very simple dessert for those last minute need a dessert times. Choose firm bananas. These can be dressed and plated up to look very impressive. Serve with fruit of choice and ice cream.

- Coat bananas lightly with flour.
- Sift the flour, cornflour and baking powder into a bowl.
- Make a well in centre and gradually add milk. Mix to a smooth consistency similar to thickened cream.
- Dip bananas into batter and fry in hot oil until golden brown.
- Coat thinly with sugar. (Optional).

- 1. Mix and sift the dry ingredients
- 2. add milk gradually
- 3. add beaten egg gradually
- 4. using a fork, dip banana slices into batter and place in about an inch of hot oil in a cast iron skillet until browned on both sides
- 5. Note: This batter could be used for bananas, zucchini slices, okra, or Oreo Cookies -- whatever you think might be tasty would probably be good!!
- 6. You could also add a little sugar, vanilla, or cinnamon, or even cayenne pepper (whatever) to punch it up to your liking. Although I would probably not add sugar if I were doing vegetables, but that is just me. Also: if you add sugar you will need to be very careful with the cooking because the sugar will brown faster.
