Steps:

  • Place the fruit in a large vat. Pour in the red wine, white wine, citrus rum and citrus vodka. Next, to add a subtle sweetness, dissolve the sugar in 1 cup water and add it to the mix. Stir well, then cover and refrigerate for several hours, giving the fruit and liquids time to meld. Serve in glasses over ice, and have tongs nearby so guests can help themselves to the fruit.
  • Designated drivers are recommended!

2 cups pineapple chunks
2 Granny Smith apples, cored and cut into cubes
2 unpeeled lemons, thinly sliced
2 unpeeled limes, thinly sliced
1 cup green seedless grapes
1 cup red seedless grapes
1 small unpeeled orange, thinly sliced
1.5 liter red wine, such as cabernet sauvignon, merlot or pinot noir, chilled
1.5 liter dry white wine, such as chardonnay, sauvignon blanc or pinot grigio, chilled
1 cup orange or citrus flavored rum
1 cup orange or citrus flavored vodka
1 cup sugar
Ice, for serving

Sangria Fruit Salad image

Steps:

  • Whisk together the orange juice, rose wine and honey in a small bowl until combined.
  • Add the grapes, raspberries, strawberries, orange segments and grapefruit segments to a large bowl and pour the rose wine mixture over top. Stir together gently, and then allow to sit in the fridge for 30 minutes.
  • Garnish with the mint right before serving.

1/4 cup orange juice (from squeezing the membranes)
1/4 cup rose wine
1 tablespoon honey
1 cup red grapes
1 cup raspberries
1 cup quartered strawberries, tops removed
2 oranges, segmented
1 pink grapefruit, segmented
2 tablespoons julienned mint

CLASSIC SPANISH SANGRIA

This is an authentic version of the popular wine drink. You can add any fruit that you want, but I find that apples and pears absorb all the rum. This one is not diluted with carbonated beverages. I have much success with red Burgundy wine and white rum, though spiced rum is nice too.

Steps:

  • Have the fruit, rum, wine, and orange juice well chilled. Slice the lemon, lime and orange into thin rounds and place in a large glass pitcher. Pour in the rum and sugar. Chill in refrigerator for 2 hours to develop the flavors.
  • When ready to serve, crush the fruit lightly with a wooden spoon and stir in the wine and orange juice. Adjust sweetness to taste.

Steps:

  • Prepare the fruit with a small serrated knife. Cut the top and bottom off the kiwi, stand it up on one of its flat surfaces and cut away the skin, keeping the knife as close to the skin as possible. Slice in half, following the core through the centre, then cut each half into slices. Put in a bowl and repeat with the other kiwi.
  • Carefully cut the skin off the mango and slice off each cheek, running your knife as close to the stone as you can. Cut each piece into slices. Remove any remaining fruit from the stone in long thin slices. Add the mango to the kiwi.
  • Top and tail the pineapple, then in a similar way to the kiwi, cut away the skin. Use your knife to go around the pineapple, taking out the divets or eyes, two to three at a time, you'll be left with a spiral pattern weaving around the outside of the fruit. Take of a circular slice, roughly 150g, quarter, remove the core then cut into chunks. Add to the bowl.
  • Halve the grapes and add to the rest of the fruit along with the berries, you may want to slice or halve strawberries if they're large. Remove the peel from the orange using the same method as the kiwi and pineapple. Holding the orange over the bowl of fruit, remove the orange segments by carefully cutting between the membrane and the fruit. The pieces should fall out into the bowl along with any juice. Squeeze the membrane over the fruit to extract the juice, add a drizzle of honey, if you like. Mix everything together and leave in the fridge to macerate for 30 mins, if you have time.

  • Wash and slice the fruit to your liking. I recommend slicing the grapes in half, and other fruits into cubes or thin slices.
  • Place all the fruit into a large bowl and cover with the sugar. Stir gently. Leave to macerate for at least five minutes, but longer if you have the time (overnight would be perfect). Stir again if needed until almost all of the sugar is dissolved.
