CHEESECAKE-STUFFED APPLES

Stuffed with cheesecake and topped with caramel sauce, buttered graham cracker crumbs and walnuts, these upgraded baked apples are the ultimate autumn dessert.

Cheesecake-Stuffed Apples image

Steps:

  • Mix together the cream cheese, 2/3 cup sugar and vanilla with a rubber spatula in a medium bowl until completely smooth with. Add the eggs and stir until completely combined.
  • Arrange a rack in the center of the oven and preheat to 300 degrees F. Cut a 1/4-inch off the top of each apple and use a melon baller or teaspoon to remove the stem and core and to hollow out about 2/3 of the apple leaving 1/2-inch of flesh around the edge (reserve the removed apples for applesauce or smoothies). Fill each apple with cheesecake batter just below the rim. Wipe away any drips or spills off the outside and top of the apple before baking. Arrange apples in a 9-by-13-inch baking pan and bake until the apples are soft but still hold their shape and have not split, 45 to 50 minutes. Let cool completely before serving.
  • Meanwhile, pulse together the graham crackers, cinnamon and remaining 2 tablespoons sugar in a food processor until fine crumbs. Add butter and process until combined.
  • Divide apples among small serving plates and top each with a generous drizzle of caramel and sprinkles or graham cracker mixture and chopped walnuts.

2/3 cup plus 2 tablespoons sugar
1 teaspoon vanilla extract
2 large eggs, at room temperature, beaten
8 medium red baking apples, such as Gala
1/2 cup crushed graham crackers (about 5 whole crackers)
1/8 teaspoon ground cinnamon
2 tablespoons unsalted butter, melted
Prepared caramel sauce, for serving
1/2 cup toasted walnuts, roughly chopped

Applesauce Fruitcake image

Steps:

  • Preheat oven to 325 degrees F (160 degrees C). Grease a 10 inch tube pan. Line bottom with parchment paper and grease again.
  • In large bowl, cream sugar and shortening until light and fluffy. Add eggs and blend well.
  • Lightly spoon flour into measuring cup; level off. Combine 1/2 cup of flour with nuts, raisins, dates and 1/2 cup cherries, stir until coated. Set aside.
  • Add remaining 2 3/4 cups flour, baking soda, cinnamon, allspice, cloves and salt to egg mixture. Blend at low speed until moistened, then beat 2 minutes on medium speed.
  • Fold fruit and nut mixture and applesauce into batter. Pour batter into a 10 inch tube pan. Arrange cherry halves and pecans on top.
  • Bake at 325 degrees F (160 degrees C) for 1hour and 15 to 45 minutes, or until toothpick inserted in center comes clean. Cool upright in pan 5 minutes. Turn upright onto wire rack and remove pan and parchment paper. Cool completely.

Steps:

  • 1. Preheat oven to 350. Grease 9 x 13 casserole dish.
  • 2. In bowl combine cream cheese 1 cup sugar and vanilla. Mix well with electric mixer. In another small bowl, combine cinnamon and 1/4 cup sugar together and mix.
  • 3. In bottom of casserole dish put 1 can of crescent rolls in bottom. Separate each section and put evenly to cover bottom of your dish. Spread cream cheese mixture evenly on top of crescent rolls. Add 1 can of your favorite pie filling and spread evenly on top. Finish with the other can of crescent rolls on top . Pour melted butter over top. Now sprinkle mixture of cinnamon and sugar on top generously on top. Bake for 35 minutes or until golden brown.
