My mom would always make this Filipino leche flan for dessert for me and I always loved it.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C).
- Combine sugar and water in a saucepan over medium heat. Heat until sugar is dissolved and mixture is thickened and light brown, 7 to 10 minutes. Spread caramel evenly over the inside of a flan mold, tilting the mold to make sure the whole surface is covered.
- Combine evaporated milk, condensed milk, egg yolks, and vanilla extract in a large bowl. Stir lightly to prevent bubbles or foam from forming. Strain batter slowly into the caramel-lined flan mold. Cover with aluminum foil. Place mold onto a baking pan filled with water.
- Bake in the preheated oven until firm, about 1 hour. Let cool, about 30 minutes. Invert carefully onto a platter.

- Caramel: Heat sugar and water over medium heat until brown and sugar has caramelized. Distribute in 8 individual molds (1/2 cup capacity). Set aside.
- Flan: Combine first 4 ingredients. Beat well. Strain mixture into prepared molds until half-full. Spread 2 tablespoons of Fruit Cocktail on each mold. Cover with wax paper or foil and steam for 40 minutes. Cool, then chill. Unmold and serve upside down.

A beautiful fresh fruit dessert, this is not your regular 'fruit pizza.' This recipe was given to me by a great cook and great friend. You can substitute your favorite fruits or berries for those in this recipe.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 10-by-15 inch jelly roll pan.
- For the crust, sift together the flour, cream of tartar, and baking soda into a mixing bowl. In a separate bowl, cream together white and confectioners' sugars, butter, vegetable oil, egg, and vanilla. Add the dry ingredients. Blend well. Spread the dough evenly on the bottom of the greased pan. Bake until golden brown, 10 to 12 minutes. Allow to cool completely.
- For the filling, cream together the cream cheese, sugar, and vanilla. Spread over the cooled crust. Arrange the fruit on the cream cheese filling and refrigerate.
- For the glaze, mix together the sugar and cornstarch in a small saucepan. Whisk in the water, orange juice, and lemon juice. Bring to a boil over medium heat; boil gently for one minute. Remove from heat and allow to cool completely.
- Spoon or brush the glaze evenly over the fruit. Refrigerate until ready to serve.

LECHE FLAN WITH GRAPEFRUIT
For the clearest caramel and smoothest custard, ceramic or glass baking dishes work best for cooking this Filipino-American-style dessert.

- Finely grate zest from grapefruit; set aside. Cut away peel and white pith from flesh; discard. Working over a bowl, cut along membranes to release segments into bowl; discard membranes. Set segments aside.
- Cook 1 cup sugar in a small saucepan over medium heat until it begins to melt and turn brown around the edges. Using a heatproof rubber spatula, pull melted sugar at edges toward center of unmelted sugar. Continue cooking, pulling in melted sugar, until all the sugar is melted and caramel is uniformly dark brown (it should smell toasty but not burnt), 10-12 minutes total (if you still have undissolved lumps of sugar, stir off heat until they melt). Divide caramel between two 8"-diameter shallow ceramic ovenproof baking dishes or two 9x5" loaf pans, preferably glass or ceramic, to create a 1/8"-1/4" deep layer. Let cool.
- Place a rack in middle of oven; preheat to 275°F. Bring a large pot of water to a boil. Purée eggs and egg yolks with remaining 2/3 cup sugar in a blender until smooth and sugar is dissolved, about 1 minute. Transfer to a large bowl and gently mix in cream, milk, salt, and reserved grapefruit zest; let sit 5 minutes. Strain into a large measuring glass. Divide custard between prepared baking dishes.
- Line a roasting pan with a thick kitchen towel; this will keep baking dishes from sliding and will insulate flan, preventing it from overcooking. Set dishes on towel and place roasting pan in oven. Pour very hot water into pan until it reaches the same level as flan in baking dishes. Bake flan until it looks set like Jell-O (it will wobble when gently shaken), 40-55 minutes. Transfer dishes to a wire rack; let flan cool.
- Run a small knife around edges of flan to loosen. Invert onto a platter and top with reserved grapefruit segments.
- Flan can be made 1 day ahead. Cover and chill. Unmold and bring to room temperature before serving.

- Put brown sugar and water in a saucepan. Caramelize on high heat. It will be ready when you see big bubbles popping and the texture is thick.
- Line cake tin with caramel. Be sure to line the sides of the pan. A tip for getting the caramel to stick to the sides is to line it and then throw it in the freezer for a few minutes.
- Custard:.
- Blend all ingredients in a big bowl with a hand mixer or spoon as not to create bubbles.
- Pour mixture into caramel lined cake pan.
- Cover with aluminum foil.
- Place tin in a larger baking pan half filled with water.
- Place pan in pre-heated oven at 350 degrees and bake flan for about 1 hour or until firm.
- Take the foil off in the last 5 minutes of baking.
- Place serving deep dish over top of the cake pan, and invert. Flan will easily plate, and the caramel provides a wonderful sauce.

SPECIAL LECHE FLAN
Leche flan, though only has a few ingredients, requires quite a few tricks to be good leche flan. Straining the egg mixture with cheesecloth is an important step. This process removes the foams that may create bubbles when flan is cooked. Soft cotton cloth will work just as well. Lineras can be bought in any Asian supermarket. If unavailable a cake pan or any small-sized aluminum pans will do.

- Prepare caramel base by putting 1-2 tbsps sugar on each linera and running the pans on the stove, using tongs to move pans over very low flame. It will take just a couple of minutes to melt the sugar into a rich, brown liquid.
- Separate yolks. Remove all white as possible.
- Add evaporated and condensed milk.
- Mix mixture with a spoon in one circular direction, avoiding building of "foams" in the mixture.
- Strain the mixture into lineras with a cheesecloth to remove the excess white part of the egg.
- Cover the lineras tightly with aluminum foil.
- Arrange lineras in a deep aluminum pan (ones used for roasting or those used for serving in buffets will do nicely) filled with water halfway of the lineras.
- Add more water in the middle of the cooking time, if needed, to prevent burning of bottom.
- Cook in oven at 375°F for around 30-40 minutes. The water-bath is more like "steam-cooking" than baking. Insert a toothpick in the center to check if done.
- Cool in the refrigerator for a few hours.
