FUDGE ROUNDS
I learned this recipe in my 7th grade Home Economics class (I won't tell you how long ago that was! LOL). It's been a favorite with the whole family ever since.

Steps:
- Combine first 4 ingredients in saucepan. Bring to a boil and boil for one minute.
- Remove from heat and stir in oatmeal. Stir until oats are softened.
- Add nuts and vanilla, mix well.
- Drop by tablespoons on cookie sheet and let set. Store in airtight container.

- In the bowl of a mixer fitted with a paddle attachment, cream together butter and sugar until light in color and fluffy. Add the egg and vanilla; mix well.
- In a separate bowl, sift together the flour, cocoa powder, baking soda and salt. Add the dry ingredients to the butter mixture and beat just until combined.
- Scoop rounded pingpong ball-sized balls of batter onto the prepared baking sheet. Bake for 9-11 minutes, until the centers no longer look wet. Let cool on baking sheet for a minute or 2 and then transfer to a wire rack to cool completely. Repeat with remaining batter.

- In a large bowl, use an electric mixer to beat the butter on medium speed until smooth. Beat in vanilla. Gradually beat in the cocoa powder and powdered sugar and beat on low until just combined. Add water and beat on medium high speed for about 2 minutes or until light and fluffy.
- For the stripes, microwave the chocolate chips and oil in a microwave safe bowl, stirring every 15 seconds, until smooth. Remove the chocolate to a squeeze bottle or ziptop bag and snip a small hole. Drizzle over chocolate in a striped pattern. Refrigerate just until chocolate is set. Serve or store in an airtight container in the fridge for up to 5 days. Best served at room temperature.
