CHILE-GARLIC SPINACH

A little chile, a little garlic, and you've got a nice side of spinach for your dinner of broiled fish, baked chicken, or sauteed shrimp.

Steps:

  • In a large skillet, heat oil over medium-high. Add chile and garlic, and cook until fragrant, 30 seconds. Gradually add spinach and cook, tossing constantly, until wilted, 1 to 2 minutes. Season with salt. Serve with lemon wedges.

1 small red chile, such as Fresno or serrano, thinly sliced

Garlic Sauteed Spinach image

Steps:

  • Rinse spinach well in cold water; dry well.
  • In a large pot, heat the olive oil and saute the garlic over medium heat for 1 minute.
  • Add all the spinach, salt, and pepper to the pot; toss with the garlic and oil.
  • Cover the pot and cook for 2 minutes.
  • Uncover, turn heat on high, and cook for another minute, stirring until all the spinach is wilted.
  • Using a slotted spoon, lift the spinach to a serving bowl and top with butter.

1 1/2 lbs baby spinach leaves
2 tablespoons olive oil
2 tablespoons chopped garlic
2 teaspoons salt
3/4 teaspoon pepper
1 tablespoon butter

Steps:

  • Melt the butter in a large frying pan, then when it starts to foam, tip in the breadcrumbs, zest, garlic and chilli. Cook until golden and crunchy. Remove from the pan, season and set aside.
  • Add the spinach to the pan and wilt, stirring. Season and serve with the crunchy crumbs sprinkled over the top.

Steps:

  • In a lidded frying pan, heat the olive oil over a low heat, add the garlic and chilli and cook until softened - about 30 seconds.
  • Tip in the spinach. Season and cover until the spinach has wilted. Drain off any liquid and toss the spinach in more olive oil and a splash of lemon juice. Serve straight away.
