GARLICKY DIP WITH GARBANZO BEANS

Blend garlic, cumin & lemon juice with garbanzo beans for a quick dip. Serve this Garlicky Dip with Garbanzo Beans with chips for an easy appetizer.

Garlicky Dip with Garbanzo Beans image

Steps:

  • Drain beans, reserving 2 Tbsp. of the liquid. Place beans and reserved liquid in blender; blend until smooth. Add remaining ingredients; blend well.
  • Transfer to serving bowl; cover.
  • Refrigerate at least 1 hour. Serve with tortilla chips.

GARLIC GARBANZO BEAN SPREAD

I wanted to try something besides hummus with garbanzo beans. I wasn't sure how the olive oil would taste (I kept wanting to add tahini instead), but it's very good. This would be a great after school snack because it's quick to prepare and healthy. You could also eat on bread like a sandwich. Steps:

  • In a food processor or blender, combine all ingredients (except pita chips and fresh veggies).
  • Cover and process until blended.
  • Transfer to a bowl and refrigerate until serving. Serve with vegetables and pita chips.

Lemon-Garlic Chickpea Dip with Veggies and Chips image

Steps:

  • Combine the chickpeas, garlic, lemon zest and juice, thyme, salt and pepper and hot sauce in food processor. Turn processor on and stream in the extra-virgin olive oil. Transfer the dip to a dish and surround with veggies and chips. That'll keep the munching going on until dinner!

1 (15-ounce) can chickpeas, drained
1 clove garlic, cracked from skin
1 lemon, zested and juiced
4 to 5 sprigs fresh thyme leaves, stripped from stems
Coarse salt and pepper
A few drops hot sauce, to taste
1/4 cup extra-virgin olive oil, eyeball it
4 ribs celery from the heart cut into dipping sticks, 4 inches long
1/2 seedless cucumber, cut into sticks
1 red bell pepper, trimmed and cut into sticks
1/2 pint grape tomatoes
1 sack reduced fat gourmet chips (recommended: Terra brand Garlic and Onion Yukon Gold flavor potato chips (50 percent less fat than regular chips))

Steps:

  • In a food processor, combine the beans, chopped onion, 2/3 cup bean liquid, garlic, lemon juice, salt, smoke flavoring and pepper. Process until smooth, stopping several times to scrape down the sides of the work bowl and adding additional bean liquid if the mixture seems too thick. Transfer to a bowl and stir in the basil and sage. Adjust the seasoning. The spread can be used immediately or covered and refrigerated for up to 3 days. Return it to room temperature before serving.
