SIRLOIN STEAK WITH MUSHROOMS
Steak served with a sophisticated but easy pan sauce of shiitake mushrooms, tarragon, white wine, shallot, and butter. Impress your sweetheart with this dish!

Steps:
- Season steak with salt and pepper on both sides.
- Heat a heavy skillet over high heat until a drop of water immediately sizzles and evaporates when flicked onto the skillet's surface. Pour in oil. Add steak and cook until it is beginning to firm and is hot and slightly pink in the center, about 4 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).
- Remove steak from skillet and set aside. Tent with foil to keep warm. Discard oil remaining in the skillet.
- Reduce heat to medium-low and cook mushrooms, shallot, and garlic, stirring frequently, until softened, about 5 minutes. Pour in white wine and cook until slightly reduced. Pour in beef broth. Reduce heat to low and stir in butter, 1 cube at a time, stirring well after each addition. Stir in tarragon. Season with salt and pepper. Serve mushroom sauce over the steak.

I think I got this recipe off AOL several years ago and it's so good! Prep time includes marinating time and cook time is a guess since grill times may be different.

- Mix the steak sauce, onion and brown sugar in a glass dish. Add steaks, coating well; marinate in fridge at least 30 minutes.
- Make mushrooms by combining all ingredients in an aluminum pan. Cover loosely with foil. Place on hot grill. Cover and grill 10 minutes. (Mushrooms can be placed in a 350º oven instead, baking for the directed amount of time). Stir mushrooms after 10 minutes and re-cover them, continuing to cook them for another 8-10 minutes.
- Remove steaks from marinade. Grill until steaks reach desired doneness.

- Using a garlic press, crush cloves into medium bowl. Stir in olive oil, steak seasoning and salt. Cut steak into four servings and add to garlic mixture. Press mixture into steaks and turn to coat completely. Let stand 10 minutes.
- Preheat large sauté pan on medium-high 2-3 minutes. Place steaks and garlic mixture in pan. Cook uncovered 5 minutes. Reduce heat to medium, turn steak and cook 6-8 more minutes until internal temperature is 140°F.
- Note: The cook time is for medium-rare steak, recommended for flavor and food safety. Add 4-6 minutes for a more well done steak.
- Add butter to pan and turn steaks to coat. Remove steaks and keep warm. Add (rinsed) mushrooms to same pan. Cover and cook 5-7 minutes until tender. Serve with steaks.

- Sprinkle steaks with pepper and salt. In a large skillet, saute the steaks for 2 minutes on each side in 1 tablespoon butter or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Remove and keep warm., In the same skillet, cook garlic in 1 tablespoon butter for 1 minute. Remove garlic and set aside. Add mushrooms to skillet; saute in remaining butter for 5 minutes or until tender. Stir in the broth. Bring to a boil; cook and stir over high heat until liquid is absorbed. Add reserved garlic. Serve with steaks.
