- In a large wok, heat oil over medium-high heat. Stir in green beans; cook, stirring frequently, for 1 to 2 minutes. Stir in garlic and ginger; cook, stirring frequently, for 3 to 4 minutes. - In a medium pot over high heat, bring about 4 cups water and 1 Tbsp. plus 2 tsp. Diamond Crystal or 1 Tbsp. Morton kosher salt to a rolling boil. Add 1 lb. green beans, trimmed, and cook, uncovered, until bright green, about 3 minutes. Drain the green beans in a colander and rinse with cold water for 10 seconds.
- In a large sauté pan over medium-high, add 2 Tbsp. extra-virgin olive oil and heat for about 10 seconds. Add the drained green beans, 5 garlic cloves, finely chopped, ¼ tsp. coarsely ground black pepper, and remaining 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt. Sauté until each green bean is evenly coated in oil, about 2 minutes. Serve warm.
