EASY TEA CAKES
Steps:
- Preheat the oven to 350 degrees F.
- Cream the butter and sugar, about 4 minutes. Add the eggs and mix thoroughly. Then add the milk and gradually add the flour, making a light, soft dough. Roll the dough out so it¿s very thin. Cut into rounds and put on a buttered baking pan. Bake until the cakes are yellowish in color, about 8 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
- Beat butter and sugar in a bowl until creamy. Stir in flour, vanilla extract, baking powder, and baking soda until dough is well mixed. Drop spoonfuls of dough 2 inches apart onto prepared baking sheet.
- Bake in preheated oven until lightly browned, 5 to 10 minutes.

Steps:
- Warm the milk with the butter in a pan until the butter has melted, then add 100ml water to cool the mixture to room temp. Tip the flour, yeast, sugar, spice and 1 tsp salt into a bowl, making sure the yeast is on the other side of the bowl to the salt. Make a well in the flour mixture and pour the milk and butter in, mixing until it forms big flakes, then bring together with your hands. Tip on a surface and knead until smooth (about 5 mins). Put the dough into a large, lightly oiled bowl, cover with a damp tea towel and leave until doubled in size, so about 1-1 ½ hours.
- Line a tray with baking paper. Tip the mixed dried fruits into the dough and knead them in, trying to disperse them evenly throughout the dough. Cut your dough into 6 even-sized balls, take each ball and, using the cup of your hand, and pressing down a little with your palm, roll the ball in a circular motion on the surface to create tension across the top of the bun and a neat round shape. Place onto a tray about 5cm away from each other and press down with your palm to flatten the dough down a little, creating the teacake shape. Cover loosely with an oiled sheet of cling film, for a further 45 mins, or until they have doubled in size.
- Meanwhile, heat the oven to 200C/180C fan/gas mark 6. Brush the top of each bun liberally with the egg wash, then bake for 20 mins on the top shelf of the oven, until the buns are golden and well risen. Allow to cool on a wire rack, then slice in half, toast and slather with butter if you like.

KERRIN'S BELGIAN TEA CAKE
This cake, from a friend, has a choice of fillings. The lemon cheese is the original filling, both are lovely.

Steps:
- Cake:.
- Sift dry ingredients, rub in butter, add eggs to form a moist dough.
- Place 1/2 mixture into a greased 7" round sandwich tin, spreading about 1/2 way up sides of tin.
- Pour hot filling over mixture in tin.
- Place remaining mixture over the filling in heaps, then sprinkle with walnuts and bake 35 mins at 190 deg C - 200 deg C (375 deg F-400 deg F) less if fan forced.
- Serve warm with whipped cream.
- Filling:.
- Boil water and sugar, add rind and boil 2 mins, then remove from stove and add custard powder, mixed with lemon juice - reheat until thickened.
- Alternate filling:.
- Add custard powder to syrup or juice from can and heat until thickened, mix in fruit.

CRANBERRY TEA CAKE
This was originally from the "Moosewood Sundays" cookbook and was an instant hit around here...part coffeecake, part dessert - yummy! I've never had almonds in the house, but can vouch that it's great even without them. I've added in a bit of orange rind to the cranberry mix before too, to give it a nice zing. I have always used a Bundt pan...makes for a very pretty presentation for breakfast, brunch, tea, dessert, or gifts, especially around the winter holidays.

Steps:
- Coarsely chop cranberries.
- Combine cranberries with brown sugar, almonds, cinnamon and nutmeg; set to the side.
- Cream butter and sugar.
- Add vanilla, sour cream, and eggs; mix thoroughly.
- Sift together flour, baking soda, baking powder, and salt.
- Stir into egg mixture just until moistened.
- Pour 1/2 of batter into greased Bundt pan or 8" round cake pan.
- Spread 1/2 of cranberry mixture over the top.
- Repeat with remaining batter and cranberries.
- Bake 50-60 min at 350.
- Remove from pan and cool on rack.
- Dust with powdered sugar.

- TO MAKE CAKE: Beat eggs and sugar until pale and thick (10 minutes.) Whisk in flour moving one direction and pour into a greased and floured 9-inch cake pan. Bake in a 350° oven until done. Cool cake; then, slice in half and transfer layers to two 9" springform pans. Evenly soak layers with the milk and sugar mixture. And spread a 1/3 cup of cool whip onto each cake layer. Set aside. (Layers will be thin.)
- TO MAKE SOUR CREAM MOUSSE: Beat the sour cream and sugar for 15 minutes. Add condensed milk and beat five more minutes. In a small saucepan whisk the Gelatine and milk until mixture comes to a boil. Add the butter and melt thoroughly, whisking non-stop. Remove from heat and slowly beat into the sour cream mixture beating two more minutes (mixture will get runny.) Evenly Divide the mousse into the two prepared springform pans and refrigerate until firm (3-4 hours.)
- TO MAKE GANACHE: Microwave cream until boiling. Pour over chocolate chips and allow to sit a few minutes. Whisk until ganache comes together and cool. Evenly pour onto the two cakes and refrigerate until set.
