GERMAN CHRISTMAS GINGERBREAD

This delicious gingerbread recipe is tasty and full of flavor. It is very different from traditional North American gingerbread but a wonderful Christmas tradition. Give it a try.

German Christmas Gingerbread image

Steps:

  • 1. Whisk together the flours, baking powder and spices.
  • 2. In a large bowl, cream the butter with the brown sugar. Beat in the eggs, then the honey, orange liqueur, sour cream and orange juice. Beat the flour mixture into the creamed mixture and then stir in the raisins and almonds. Turn batter into a greased and floured tube pan.
  • 3. Bake cake at 350 degrees F (175 degrees C) for 80 minutes or until it tests done with toothpick. Transfer to a rack to cool. Top with a dollop of whip cream or Cool Whip (if desired).

2 c packed brown sugar
3 eggs
2/3 c honey
1/4 c orange liqueur
1 c sour cream
1/2 c orange juice (i use fresh squeezed)
1 2/3 c all-purpose flour
1 c whole wheat flour
4 tsp baking powder
2 tsp ground ginger
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground cloves
1 c raisins
1 c blanched slivered almonds (optional)

  • Put the whole hazelnuts, almonds, candied lemon peels, and candied orange peels into your food processor and chop them up until the mixture is loose and coarsely grated. The texture doesn't have to be super finely ground - but there should be no overly large chunks of nut remaining.
  • Crack the eggs into a large bowl and add the sugar as well as the honey. Mix everything together with your electric mixer until you have a creamy mixture that has some bubbles. Set your electric mixer aside.
  • Fold the gingerbread spice, cinnamon, and the content from your food processor into the egg mixture in small increments. This works best with a spatula or a large spoon. Mix until everything is well combined.
  • Line your baking sheets with parchment paper and preheat the oven to 300 degrees Fahrenheit.
