Steps:
- 1. In a large bowl, combine dry ingredients. Add the shortening. Work it in with a pastry blender,until the shortening is totally mixed into the flour. Add about 2/3 cup of dried fruit or nuts in a separate baggie;or a combination of both.
- 2. Pour 2 cups of the mix in a baggie,or container of your choice. This makes 3 batches. And each batch makes about 10-12 scones.
- 3. Attach these directions: To make theses scones, you will need: this bag of mix 1 large egg 1 teas vanilla extract or almond or lemon or orange 1/2 cup of water or juice Mix all the ingredients together-just until mixed. Drop by spoonful onto greased or parchment lined cookie sheet. Bake at 400^ for 14 to 20 minutes- (depending on the size you make the scones) Bake until lightly golden.
GINGERBREAD COOKIE MIX IN A JAR
Gingerbread Cookie Mix layered in a one quart canning jar. Great Christmas gift. Place a circle of gingerbread fabric between lid and ring and tie a gingerbread man cookie cutter onto jar with ribbon!

- Mix 2 cups of the flour with the baking soda and baking powder. Mix the remaining 1 1/2 cups flour with the ginger, cloves, cinnamon, and allspice. In a 1 quart, wide mouth canning jar, layer the ingredients starting with the flour and baking powder mixture, then the brown sugar, and finally the flour and spice mixture. Pack firmly between layers.
- Attach a card to the jar with the following directions: Gingerbread Cookies 1. Empty contents of jar into a large mixing bowl. Stir to blend together. Mix in 1/2 cup softened butter or margarine, 3/4 cup molasses, and 1 slightly beaten egg. Dough will be very stiff, so you may need to use your hands. Cover, and refrigerate for 1 hour. 2. Preheat oven to 350 degrees F (175 degrees C). 3. Roll dough to 1/4 inch thick on a lightly floured surface. Cut into shapes with a cookie cutter. Place cookies on a lightly greased cookie sheet about 2 inches apart. 4. Bake for 10 to 12 minutes in preheated oven. Decorate as desired.

- Preheat oven to 400°. In a large bowl, whisk the first 7 ingredients. Cut in butter until mixture resembles coarse crumbs. In another bowl, whisk molasses, milk and egg yolk until blended; stir into crumb mixture just until moistened., Turn onto a lightly floured surface; knead gently 6-8 times. Pat into an 8-in. circle. Cut into 12 wedges. Place wedges 1 in. apart on a greased baking sheet., In a small bowl, beat egg white until frothy; brush over scones. Sprinkle with sugar. Bake golden brown, 12-15 minutes. Serve warm.

MASTER SCONE MIX
I got this scone recipe from Ana Olsen's bake show. Its lovely and rich. Then I decided to make a dry master mix to store in the cupboard ( like Bisquick). Then when I want to make scones, I just measure out the wet ingredients, and mix with the measured dry ingredients, bake and there you are. Fast, and delicious! This mix makes 3 batches.

- Mix the dry ingredients and the lemon zest together.
- Add the cold butter that has been cut into small pieces.
- Slide your hands though the mixture making curls of the butter,.
- ( this will make a flaky product).
- Store in a cupboard up to one month.
- One batch;.
- 2 cups master mix.
- Wet Ingredients; for one batch.
- 1/2 Cup whipping cream.
- 1/4 Cup 2% milk.
- 1 egg.
- 1 teaspoons vanilla.
- Mix the wet ingredients and pour all at once into the dry. Gently mix.

- Form into a round, and cut 8 pieces, then place them onto a baking

GINGERBREAD GIFT JARS

- Mix sugar with ginger, allspice and cinnamon. Spoon into a jar and pack down tightly. Add a layer of crystallised ginger. Mix flour with baking powder and bicarbonate of soda and spoon on top of the ginger. Put on the lid, decorate with ribbons and a cookie cutter.
- Label with cooking instructions: Mix 150g melted butter with 1 tbsp golden syrup and 1 egg yolk. Add to the dry ingredients, mix well, then knead to a dough. Chill for 15 mins then roll out. Cut into biscuits and bake at 200C/180C fan/gas 6 for 8-10 mins. Cool on a wire rack.

GIFT JAR GINGERBREAD SCONE MIX
This is a nice homemade gift mix. Makes a great afternoon project for kids; mixing the dry ingredients and packing the jars, then making and decorating the gift tags. Enlist the assistance of your favorite word processing software and set up the ingredient list and instructions on plain paper, getting about 3 or 4 sets on one sheet depending on the font and typeface size you select. Print and cut out the tags. This leaves the back of the tags free to be decorated before they're tied onto the jars. Alternatively, cut out a piece of pretty paper that is slightly smaller than your tag, line it up with the top of your tag, centered and punch a hole through both pieces of paper before tying the tag on... it's an easy way to pretty up the tag if you don't have little artists willing to decorate the plain paper tags! Recipe is easily doubled, tripled, quadrupled... adjust servings to fit your gift list! Cooking time is for the finished product. No cooking is involved in making the mix.

- Prepare the dry mix by combining the flour, sugar, baking powder and spices in a bowl.
- Cut in the shortening with a pastry blender or 2 knives until the mixture looks like coarse crumbs.
- Place the dry mix into a small jar.
- A single batch yields about 1 1/2 cups of dry mix, so pick an appropriately sized jar.
- Prepare a tag that lists the following ingredients: 1 jar (1 1/2 cups) gingerbread scone mix, then list the wet mix ingredients as noted in the ingredients section.
- Include the following instructions on the tag and attach to your gift jar: In a medium bowl, empty the contents jar of gingerbread scone mix.
- In a separate bowl, combine 2 Tbsp milk, 1 Tbsp molasses and 1 beaten egg.
- Add the wet mix to the dry mix and stir to combine.
- Turn dough out onto a lightly floured board and knead until the dough is smooth.
- Roll the dough into a 6 inch circle and cut it into 4 wedges.
- Place wedges on an ungreased baking sheet.
- Brush tops with luke warm water and sprinkle with coarse sugar if desired.
- Bake for 10-12 minutes in a preheated 400 degree oven until scones are slightly browned on top.
- Remove from oven and cool on a baking rack.
- Serve.
- Notes: Gift jars can be stored for up to 6 weeks at room temp or up to 6 months if frozen.
