GINGER-MACADAMIA BROWNIES

Adding macadamia nuts and ginger transforms familiar brownies into something truly extraordinary. For a festive summer finale, serve them with strawberries.

Steps:

  • Preheat oven to 325°F. Butter 8x8x2-inch glass baking dish. Mix butter, chocolate and coffee powder in heavy medium saucepan. Stir over low heat until smooth. Cool, stirring occasionally.
  • Whisk eggs in large bowl to blend. Whisk in sugar, vanilla and salt. Fold in chocolate mixture. Mix in flour, then nuts and ginger. Pour batter into prepared pan. Bake until tester inserted into center comes out with moist crumbs still attached, about 40 minutes. Cool in pan on rack. Cover and let stand at room temperature overnight. Cut into 16 squares.

3/4 cup (1 1/2 sticks) unsalted butter, cut into pieces
4 ounces unsweetened chocolate, chopped
1 teaspoon instant coffee powder
3 large eggs
1 1/2 cups (packed) brown sugar
2 teaspoons vanilla extract
1/4 teaspoon salt
1 cup unbleached all purpose flour
1 cup chopped macadamia nuts
1/4 cup minced crystallized ginger

GINGERY BROWNIE CRINKLE COOKIES

These chocolate cookies are irresistible warm from the oven, when the chips or chunks inside are still luxuriously liquidy. They then cool to a fudgy, brownielike texture with a chewy edge - if any manage to stay around that long. Both fresh and candied ginger lend sophistication, but feel free to leave them out if you want a pure chocolate experience. These cookies are also ideal for late-night cravings: You can be eating them 30 minutes after you start measuring the cocoa powder.

Gingery Brownie Crinkle Cookies image

Steps:

  • Heat oven to 350 degrees. Combine flour, cocoa powder, baking powder and salt in a medium bowl, and whisk to combine. Set aside.
  • Combine the 8 ounces bittersweet chocolate and the butter in a small heatproof bowl that fits on top of a small saucepan without falling in. Bring 1 inch of water to a boil in the saucepan over high, reduce to a simmer, then set the bowl on top. Stir occasionally until completely melted. Remove bowl from saucepan to cool slightly.
  • Combine eggs, granulated sugar and light brown sugar in the bowl of an electric stand mixer fitted with the whip attachment. Beat on medium speed to combine, scraping down the sides once. Increase speed to high and beat until pale and fluffy, about 5 minutes, scraping the bowl as needed. Add the ginger and vanilla. Beat to combine.
  • Add the melted chocolate mixture and beat on medium speed to combine. Add the flour mixture and beat on low speed until just combined. Remove bowl from mixer, scrape sides and fold a few times to make sure everything is well combined. Add the 4 ounces bittersweet chocolate chips and fold to combine.
  • Use a small cookie scoop to scoop dough (which will be pretty runny) into generous 1-tablespoon portions. Transfer to parchment-lined baking sheets, setting each scoop 3 inches apart. Top each cookie with a good pinch of candied ginger. Bake until surface is crinkled and edges are firm, 8 to 10 minutes, rotating sheets from front to back and top to bottom halfway through.
  • Let cookies cool for a few minutes on the baking sheets, and transfer them to a wire rack to cool further. Scoop any remaining dough onto one of the baking sheets - it's O.K. to reuse the parchment - and repeat. Cookies will keep in an airtight container at room temperature for 3 to 4 days.

1/3 cup/45 grams all-purpose flour
1/3 cup/30 grams Dutch-processed cocoa powder
3/4 teaspoon baking powder
1/2 teaspoon kosher salt
8 ounces/225 grams bittersweet chocolate (70 percent), broken or chopped into pieces
1/4 cup/55 grams unsalted butter (1/2 stick)
2 large eggs, at room temperature
1/2 cup/100 grams granulated sugar
1/4 cup/55 grams light brown sugar
1 tablespoon grated fresh ginger
1 teaspoon vanilla extract
4 ounces/115 grams bittersweet chocolate chips or chopped chocolate (about 2/3 cup)
8 to 10 pieces candied ginger slices (about 2 1/2 ounces/70 grams), thinly sliced crosswise

CHOCOLATE MACADAMIA NUT BROWNIES

Macadamia Nuts were well-known to the indigenous inhabitants of Australia, and were first discovered by early white settlers in 1828. This now immensely popular Bush Nut is found in many Australian recipes. These Chocolate Macadamia Nut Brownies can be eaten straight away or made up to a week before required. Keep covered in the refrigerator or perhaps, if you want them to still be where you've put them in a week's time, hidden. Adapted from a recipe on the "Australian Women's Weekly" website.

Chocolate Macadamia Nut Brownies image

Steps:

  • Preheat the oven to moderate.
  • Grease a deep 19cm-square cake pan, and cover the base with baking paper.
  • Combine the butter and chocolate in a pan and stir over a low heat until both have melted.
  • Remove the pan from the heat.
  • Add the sugar and honey.
  • Stir in the lightly beaten eggs.
  • Sift the flour.
  • Add the sifted flour and the nuts and gently fold into the mixture until all the ingredients are well combined.
  • Pour the mixture into the prepared pan.
  • Bake in a moderate oven for about 30 minutes - or until the brownies are firm.
  • Cool the brownies in the pan, and cut into squares when cold.

125 g butter, chopped
90 g semisweet dark chocolate squares, chopped coarsely
90 g milk chocolate pieces, chopped coarsely
1/2 cup raw brown sugar, firmly packed
2 tablespoons honey
2 eggs, beaten lightly
1 cup plain flour
2/3 cup macadamia nuts, chopped coarsely

Macadamia & Ginger Fingers image

Steps:

  • Preheat oven to 350ºF. Line a 9"x9" brownie pan with baking parchment, extending the paper just above the edges of the pan.
  • Beat the butter and sugar in a bowl with an electric mixer until light and fluffy. Add the flour and ground ginger; beat on low speed until just combined.
  • Spread evenly into prepared pan and bake for about 10-15 minutes or until lightly browned. Cool in pan.
  • For topping - combine butter, golden syrup and icing sugar in a small saucepan and stir over a medium heat until mixture is smooth, about 5 minutes. Stir in nuts and finely chopped crystallised ginger.
  • Spread hot macadamia topping evenly over cooled base. Return to oven and bake for about 10 minutes - the nuts should be just turning brown, keep an eye on them.
  • Cool in pan and then cut into fingers or squares.
  • TIP: recipe says to make sure the base is cooled to room temperature before spreading the hot nut/ginger topping over.
