Steps:

  • Preheat the oven to 350 degrees F.
  • Add the peaches to a large high-sided saute pan with the vanilla, 3 tablespoons of the brown sugar and 1/2 teaspoon of the ginger. Cook over medium-high heat until the peaches start to defrost and soften and the sugar starts to melt, about 5 minutes. Pour the peach mixture into a 9-inch deep-dish baking dish and set aside to cool.
  • In the bowl of a food processor fitted with a blade, mix together the whole-wheat flour, salt, remaining 1/4 cup brown sugar and 2 teaspoons ginger. Add the cold butter to the food processor and process until it starts to come together to form a dough. Add the pecans and oats and pulse just until the pecans are roughly chopped.
  • Crumble the crumb topping onto the peaches, coating them completely. Bake until the peaches are tender and the crumble is golden brown, 45 to 50 minutes.
  • Serve the crumble with vanilla ice cream and spoon over the Buttered Pecan Ice Cream Topping.
  • In a small saucepan, combine the butter, sugar, corn syrup and salt. Cook over medium heat, stirring constantly, until the sugar is melted and the mixture becomes thick and syrupy, 2 to 3 minutes. Stir in the pecans, then remove from the heat and stir in the vanilla. Let cool slightly.

Three 16-ounce bags frozen peaches
1 teaspoon vanilla extract
1/4 cup plus 3 tablespoons light brown sugar
2 1/2 teaspoons ground ginger
1/2 cup whole-wheat flour
Pinch kosher salt

1 cup pecans halves
1/2 cup oats
Vanilla ice cream, for serving

1/2 cup light brown sugar
1/4 cup light corn syrup
1/2 teaspoon kosher salt
1 1/2 cups toasted pecan halves

MINI GINGER-PEACH TARTS

There's nothing better than sweet ripe peaches turned into little tarts. I decided to add a special ingredient in this recipe to mix things up: ginger. Fresh ginger is incorporated into the crust and candied ginger is added to the filling.

Steps:

  • For the crust: Position a rack in the middle of the oven and preheat to 375 degrees F.
  • Combine the flour, confectioners' sugar, salt and fresh ginger in a food processor. Pulse to mix everything, about 8 times. Scatter the cold butter pieces all around the flour mixture. Pulse to help break up the butter, about 6 times. Add the egg and pulse until the mixture looks like wet sand.
  • Pour the mixture onto a large piece of parchment paper. Knead the dough until it comes together and there are no dry spots. Form the dough into a ball and cut it in half. Shape each half into a ball then place each ball between 2 sheets of parchment. Roll each ball flat into a disk about 1/8 inch thick between the parchment. Keep each disk between the parchment and refrigerate until chilled. (This is a good time to prepare the remaining ingredients.)
  • Working with the first chilled disk (keep the second in the fridge), cut out rounds to fill three 4-inch nonstick mini tart pans with removable bottoms.
  • Press 1 round of dough into the bottom and up the side of a tart pan, then use a paring knife to trim the excess pastry. Repeat with the second disk. Place all 6 filled tart pans in the freezer while you make the filling.
  • For the filling: Combine the peaches, granulated sugar, flour, melted butter, and minced candied ginger in a large bowl and toss to coat. Transfer to the prepared tart shells and place on a rimmed baking sheet.
  • Bake 30 to 35 minutes, until the edges are golden brown and the bottom of the crust is cooked through.
  • Let cool on a wire rack and brush each tart with the jam.
  • For serving: Garnish each tart with the candied ginger, if desired. Serve with vanilla ice cream or whipped cream.

2 cups all-purpose flour
1/2 cup confectioners' sugar
1/4 teaspoon kosher salt
1/4 teaspoon finely grated fresh ginger
10 tablespoons cold unsalted butter, cut into pieces
1 large egg
5 peaches (about 1 1/3 pounds), peeled and sliced (about 2 1/2 cups sliced)
1 to 2 tablespoons granulated sugar, depending on the sweetness of the peaches
1 tablespoon all-purpose flour
1 tablespoon unsalted butter, melted and cooled
2 teaspoons finely minced candied ginger
1/4 cup peach jam or apricot jam, heated, for glazing
12 thin slices candied ginger (optional)
Vanilla ice cream or whipped cream

Steps:

  • Set out a large bowl of ice water.
  • Bring a large pot of water to a boil.
  • Carefully put 2 peaches at a time in the boiling water; leave them until scalded, 30 seconds to 1 minute. Quickly transfer to the ice water, leaving them to cool for 30 seconds to 1 minute. Remove to a paper towel-lined plate. Repeat to scald and cool remaining peaches.
  • Peel peach skin; discard skin and pits. Chop peach flesh and place in a large pot over medium-low heat. Cook, stirring frequently, until soft, about 30 minutes, adding water if necessary to prevent from sticking.
  • Meanwhile, inspect 4 pint-sized jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until peach butter is ready. Wash new, unused lids and rings in warm soapy water.
  • Place cooked peaches in a blender; puree until smooth. Measure out 8 cups peach pulp and transfer back to the pot. Reserve any extra pulp for another use.
  • Add sugar, cinnamon, and nutmeg to the peach pulp. Bring to a simmer over medium-low heat; simmer, stirring frequently, until mixture has reduced and thickened, 5 to 10 minutes.
  • Pack peach butter into hot, sterilized jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any residue. Top with lids and screw rings on tightly.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.
  • Remove the jars from the stockpot and let rest, several inches apart, for 12 to 24 hours. Press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

  • Place the chopped peaches in a large pot. Stir in the sugar, cinnamon, and lemon juice. Heat the mixture over medium heat for 30 minutes, stirring occasionally to make sure the mixture doesn't stick to the bottom of the pan. Remove from heat and stir in the vanilla extract.
  • Using an immersion blender, puree the peach mixture until desired consistency. I like to leave a few small chunks, but you can puree it until perfectly smooth if desired. If you don't have an immersion blender, you can use a blender or food processor. Let the peach butter cool to room temperature and transfer the peach butter to a blender or food processor and puree.
  • Let the peach butter cool completely. Pour into jars and store in the refrigerator. It will keep for about two weeks.
  • Note-this peach butter can be canned. Peach butter is great on toast, biscuits, pancakes, waffles, stirred into oatmeal, yogurt, or used as an ice cream topping!
