SALTED LEMON-GINGER SPRITZER

A little sweet, lightly sour and a touch briny: This spritz is inspired by the salty lemonade found in Vietnam as a way to beat the heat. Without ice and ginger beer, this mix keeps well in the fridge, so consider making a large batch to help get you through the summer. If adding ginger kombucha, bear in mind that, though most brands are not legally considered alcoholic by the Alcohol and Tobacco Tax and Trade Bureau, they do contain trace amounts (up to 0.5 percent). If you're strictly abstaining, opt for something like non-alcoholic ginger beer or ginger ale.

Salted Lemon-Ginger Spritzer image

Steps:

  • Place the lemon and salt in a large wine glass and using the back of a spoon, lightly muddle to break up and release some of the oils and juices. Add lemon juice and ginger (if using) and top with lots of ice and ginger beer. Garnish with lemon wedge or fresh ginger.

1/4 lemon, seeds removed, coarsely chopped (skin, peel and all)
Small pinch of kosher salt or fine sea salt
1 tablespoon fresh lemon juice
1 teaspoon freshly grated ginger (optional)
Ginger beer or ginger kombucha, to taste
Lemon wedge or slice of fresh ginger, for garnish

Earl Grey Spritzer image

Steps:

  • Dissolve the sugar in 1 cup water and bring to a boil in a small saucepan. Reduce the heat to low and cook until the mixture turns syrupy, about 5 minutes. Remove from the heat. Place the tea bags in the saucepan and let the mixture come to room temperature. Refrigerate until cold, about 2 hours. (Syrup will keep up to one month stored in the refrigerator in a container with a tight fitting lid.)
  • Spoon 3 tablespoons of the cold Earl Grey simple syrup into each Champagne flute. Garnish with a thin slice of lemon.

Steps:

  • Fill a Collins glass with ice, pour in the limeade and cherry juice and top with the ginger beer. Garnish with the maraschino cherries and a lime wedge.

4 ounces (1/2 cup) store-bought limeade
2 to 3 maraschino cherries plus 1 1/2 ounces (3 tablespoons) cherry juice
2 to 3 ounces (4 to 6 tablespoons) ginger beer
1 lime wedge

Steps:

  • Put the tea bags in a small saucepan, pour the boiling water over them, and steep for 15 minutes.
  • Put the saucepan over medium heat and cook until the tea is reduced by half. Stir in the honey and lemon juice, then let cool to room temperature. To serve, put 2 tablespoons of the ginger syrup in a glass and add sparkling water.
  • For a change, try making this recipe with both chamomile and ginger tea bags, or a chamomile ginger blend, if you can find that.
  • Store the syrup, covered, in the refrigerator for 5 days.
