GINGERBREAD CAKE MIX

This makes a nice hostess gift, housewarming gift or even a bridal gift. I put the cake mix in a glass jar with ribbon tied around it. Then put that in a basket along with 9-inch baking dish, jar of molasses, 4 mugs and a bag of fru-fru coffee. Recipe and basket idea are adapted from The Perfect Mix, by Diane Phillips.

Gingerbread Cake Mix image

Steps:

Mix together all the ingredients in a mixing bowl.
Transfer mixture to an air-tight container.
Include the following instructions for making Gingerbread Cake: Grease a 9-inch baking dish.
Put 1 container of Gingerbread Cake Mix into a mixing bowl; make a well in the middle of the mixture.
Add in 1/2 cup softened butter or margarine, 1 egg, 1/2 cup sour cream, and 1/2 cup molasses.
Beat on low speed with an electric mixer until the batter comes together.
Gradually add in 1 cup boiling water; stir just until combined.
Pour batter into baking dish and bake in a 350° oven for 35 minutes or until pick comes out clean.
Cool and serve with whipped cream.

Steps:

Stir together the cinnamon, ginger, allspice, nutmeg, black pepper and ground cloves in a small bowl until thoroughly combined. Use accordingly in your favorite gingerbread-spiced recipes. The spice mix can be stored in an airtight container for up to 6 months.

Cake Mix Gingerbread Men image

Steps:

Preheat oven to 375 degrees F.
Combine cake mix, flour, eggs, oil, molasses and ginger in large bowl (mixture will be soft). Refrigerate 2 hours.
Place dough on lightly floured surface, cover with waxed paper. Roll dough to 1/4-inch thickness. Cut with gingerbread man cookie cutter. Place 3 inches apart on ungreased cookie sheet. Decorate with non pareils.
Bake 8 to 10 minutes or until edges start to brown. Remove immediately to cooling rack.
Place icing in storage bag. Snip just the tip of one corner off to allow for a small hole. Pipe the face and ruffles onto cookies.

In the bowl of your mixer combine the dry ingredients and whisk 30 seconds to throughly combine.
To this add the remaining ingredients and mix on medium speed for 1 minute ( a bit longer if using a hand held mixer). Scrape the sides and bottom of the bowl and mix 1 minute more.
Pour into prepared pans and bake at 325 degrees. Check at 35 minutes, the cake will be slightly pulled away from the sides of the pan and a toothpick inserted in the center should pull out clean or with only a few crumbs.
