NORMA'S MOIST LEMON GLAZED POPPY SEED BREAD

I have made this bread for so many years and given it to friends and family for gifts. It is so moist and freezes well also. Some think it's more like a cake than a bread. Norma's Moist Lemon Glazed Poppy Seed Bread image

Steps:

  • 1. Preheat your oven to 350.
  • 2. Greese bottom only of 4 (5-1/2 X 3 inch) loaf pans or one large loaf pan. Set aside.
  • 3. Sift the flour,baking powder and salt into a large mixing bowl and add all the other ingredients.
  • 4. Beat at medium speed, scraping bowl often, until mixture is well blended.
  • 5. Pour and spread batter into prepared pans.
  • 6. Bake for 30 to 40 minutes or until a toothpick inserted in center comes out clean.
  • 7. Remove from oven and set on wire rack.
  • 8. Stir together all glaze ingredients in small bowl and drizzle over warm bread loaves.
  • 9. Cool for 10 minutes and remove from pans.
  • 10. Wrap each loaf in clear wrap to keep moist. This bread does freeze well.

2 1/4 c flour
1 1/2 tsp baking powder
1 tsp salt
1 1/4 c sugar
3/4 c milk
3 large eggs
1 c butter, melted
1 Tbsp grated lemon peel
2 Tbsp poppy seeds
lemon glaze:
3 Tbsp butter, melted
1/3 c sugar
1 1/2 Tbsp fresh squeesed lemon juice or bottled

Glazed Lemon-Poppy Seed Bread image

Steps:

  • Combine first 6 ingredients in large bowl; make a well in center of mixture. Combine skim milk, vegetable oil, egg and 1 TBL lemon juice; add mixture to well in dry ingredients, stirring just until moistened.
  • Pour batter into an 8 ½ x4 ½ x3-inch loaf pan coated with cooking spray. Bake at 400 degrees for 30 to 35 minutes or until a wooden pick inserted in center comes out clean. Let cool in pan 10 minutes; remove from pan and let cool on wire rack.
  • Combine powdered sugar and 1 ½ tsp lemon juice; drizzle glaze over bread.

Cheesecake-Poppy Seed Muffins image

Steps:

  • Heat oven to 425°F. Place paper baking cup in each of 12 regular-size muffin cups, or grease bottoms only of muffin cups.
  • Squeeze Glaze packet (from muffin mix) about 10 seconds (do not microwave). Cut off tip of 1 corner of packet with scissors. In small bowl, stir together cream cheese and about half of the glaze. Reserve remaining glaze for topping.
  • In medium bowl, stir Muffin Mix, milk, oil and eggs just until blended (batter may be lumpy). Place 1 tablespoonful of batter in each muffin cup. Top batter in each cup with about 1 teaspoon cream cheese mixture. Divide remaining batter among muffin cups (each about two-thirds full).
  • Bake 17 to 22 minutes or until golden brown and tops spring back when lightly touched. Cool 5 minutes; remove from pan. Cool 5 minutes longer. Drizzle remaining Glaze over muffins; serve warm. Refrigerate any remaining muffins.

Poppy Seed Bread with Glaze image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease bottoms of two 9-inch loaf pans.
  • Mix together flour, salt, baking powder, poppy seeds, butter flavoring, oil, eggs, milk, sugar, vanilla, and almond flavoring. Pour into prepared pans.
  • Bake at 350 degrees F (175 degrees C) for one hour. Cool 5 minutes. Poke holes in top of loaves and pour glaze over.
  • To make glaze: Mix orange juice, 1/2 teaspoon butter flavoring, 1/2 teaspoon almond flavoring, and 1 teaspoon vanilla. Add enough confectioners' sugar to make glaze.
