BAKED DOUBLE CHOCOLATE DONUTS (GLUTEN FREE)
Yes, you can make delicious, cakey, gluten free donuts. Recipe #155392 was my inspiration for the glaze. The recipe makes six regular donuts or 12 mini-donuts. If using the mini-pan the cooking time may need to be adjusted.

Steps:
- Preheat oven to 375 degrees. Spray a 6 hole donut pan with non-stick cooking spray.
- In a medium bowl blend together the flour, tapioca starch, cocoa, sugar, gum, baking powder, salt, cinnamon and buttermilk powder.
- In a small bowl beat together the eggs, oil and 2 tablespoons water. Pour the mixture into the dry ingredients and mix until well combined. If mixture is to thick add in additional water until a smooth, thick, cake batter consistency is achieved.
- Spoon the mixture into the prepared pan, smoothing with a spatula. Place in pre-heated oven and bake for 10 to 12 minutes. Allow to rest in pan a minute or two and then turn out onto a wire rack to cool for a few minutes.
- In a small bowl, blend together the coconut oil, cocoa, 1 1/2 tablespoons hot water, sugar and vanilla. Stir until smooth adding in additional water as needed. Place the cooling rack with donuts on a cookie sheet and spoon the chocolate glaze over the donuts allowing the glaze to drip down sides. Immediately top with topping of choice; i.e., peanuts, coconut or nonpareils. Enjoy!

Steps:
- Whisk all dry ingredients together.
- Mix in softened butter.
- Then mix in egg, vanilla and yogurt.
- Add milk to a cookie dough like consistency.
- Grease a muffin tin well.
- Use a medium size cookie scoop and to place one ball in each hole.
- Bake at 350 for 13-15 minutes.
- Remove to wire rack to cool.
- Dust liberally with powdered sugar.

- Remove the yeast packet from the pizza mix. Whisk the yeast and warm water together in the bowl of a stand mixer. Allow to stand for five minutes.
- Whisk together the pizza mix, granulated sugar, egg replacer, baking powder, and salt in a large mixing bowl.
- Add the whisked flour mixture, apple juice, applesauce, and vinegar to the yeast mixture. Fit the mixer with the flat paddle attachment. Mix dough until smooth, about three minutes. If dough is dry, add an additional tablespoon of water.
- Dust counter with white rice flour. Turn dough out onto the counter. Knead a few times. Pat dough into a disk. Cut in half. Dust a 12x18 piece of parchment paper with white rice flour. Place the dough in the center of the parchment paper. Dust the top of the dough with white rice flour. Cover the dough with a second piece of parchment paper. Roll dough out into 1/4 inch thickness. Do not roll the dough thinner than this or it won’t puff. Repeat with the second piece of dough.

- Combine the warm water, sugar and yeast; stir and set aside to activate the yeast. Allow mixture to sit until it becomes frothy, at least 5 minutes.
- Meanwhile, beat together the egg and milk. Add 1 cup of the gfJules Gluten Free All Purpose Flour and the salt. Beat until integrated.
- Cut the shortening into small chunks and mix in with the 1 cup flour, egg and milk. Slowly beat in remaining flour and the proofed yeast mixture until completely mixed. The dough should start to pull away from the sides of the bowl and not be stiff or sticky at this point.
- Turn the dough out onto a clean surface or pastry mat lightly dusted with gfJules Gluten Free All Purpose Flour. Roll gently into a 1/2-inch thick rectangle.
