GLUTEN-FREE HOMEMADE WAFFLES

Steps:
- Heat waffle maker. (Waffle makers without a nonstick coating may need to be brushed with vegetable oil.) In blender, place eggs, milk, oil, sugar and vanilla. Cover; blend until mixed. Add all flours, the baking powder, salt and baking soda. Cover; blend until well mixed.
- Pour slightly less than 1 cup batter onto center of hot waffle maker. (Check manufacturer's directions for recommended amount of batter.) Close lid of waffle maker. Bake about 5 minutes or until steaming stops and waffles are browned on both sides. Carefully remove waffle. Repeat with remaining batter. Serve waffles with syrup.

GLUTEN-FREE WAFFLES
So far this is the best I've come up with for waffles. They get a nice crispy outer shell in my waffle iron that I find delicious. Be warned: you have to like buckwheat to like these. Using half creamer and half milk is pretty awesome if you don't mind the extra fat/calories. You can substitute applesauce for the oil, if desired.

- Preheat a waffle iron according to manufacturer's instructions.
- Stir milk, buckwheat, almond flour, vegetable oil, eggs, baking powder, sugar, and salt together in a bowl until batter is smooth.

- Preheat a waffle iron according to manufacturer's instructions. Grease with cooking spray.
- Combine oats and almond milk in a large bowl.
- Whisk egg yolk and butter together in a small bowl; stir into oat mixture.
- Beat egg white in a glass, metal, or ceramic bowl until stiff peaks form.
- Stir brown sugar and baking powder into the oat mixture. Fold beaten egg white gently into the batter.
- Scoop 1/2 cup batter onto the preheated iron and spread to the edges. Close iron and cook until iron stops steaming, about 5 minutes. Repeat with remaining batter.

GLUTEN-FREE WAFFLES
Here's a fantastic gluten-free waffle recipe made with coconut flour. It's filling, tasty and high in protein and fiber. Top with pure organic maple syrup, fresh fruit or organic melted butter.

- Grease your waffle iron accordingly (see notes above), and start your waffle iron. Let it warm up for about three minutes. In the mean time, continue....
- Whisk together the eggs, coconut milk and melted oil or butter in a small bowl.
- Sift all the dry ingredients in the liquid ingredients and whisk slowly and lightly until smooth.
- After the waffle iron is warm, pour your batter into the center of your waffle iron and spread the batter out slightly. No need to spread it all the way. Press the other half of the waffle iron down gently and let cook for 4-5 minutes.
- Open the waffle iron and let the waffle cool for about 3 minutes. Carefully move a small spatula underneath the waffle, loosening it. Gently remove the waffle and serve.
