Steps:

  • Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan, using 3 tablespoons gluten-free flour., In a large bowl, whisk the remaining 2 cups flour and next 9 ingredients. In another bowl, combine water, almond milk, oil and vanilla until well blended. Gradually beat flour mixture into milk mixture., Transfer to prepared pan. Bake until a toothpick inserted in center comes out clean, 50-55 minutes. Cool in pan 15 minutes before removing to wire rack to cool completely. Dust with confectioners' sugar before serving.

This chocolate cake is an adaptation of a cake I ate as a child. It's easy, moist, and delicious! I have successfully substituted egg-free mayonnaise for the regular mayonnaise, if eggs are off your list, too. Frost with your favorite chocolate frosting.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray two 9-inch cake pans with cooking spray.
  • Combine flour, sugar, cocoa powder, baking powder, baking soda, and xanthan gum in a bowl; stir in mayonnaise until well mixed. Gradually pour in hot water and vanilla extract; stir until smooth. Spoon batter into the prepared cake pans.
  • Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean and the cake slightly pulls away from the sides of the pan, about 30 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

Gluten-Free Chocolate Espresso Cake image

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Generously grease bottom only of (8- or 9-inch) round pan.
  • Beat cake mix, 1 cup coffee, the butter and eggs in large bowl on low speed of electric mixer 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Pour into pan. Bake 43 to 48 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; run knife around inside edges of pan; remove from pan to wire rack. Cool completely.
  • In small bowl, stir together frosting and 2 tablespoons coffee; set aside. In large bowl, beat whipping cream to stiff peaks. Beat frosting mixture into whipping cream until stiff enough to spread.
  • Cut cooled cake in half horizontally. Place bottom layer, cut side up on serving plate; spread one third of the whipped cream mixture over cake; top with remaining cake half, cut side down. Spread remaining whipped cream mixture over top and side of cake. Arrange espresso beans over cake. Refrigerate at least 1 hour before serving. Refrigerate any remaining cake.

GLUTEN-FREE MOIST CHOCOLATE CAKE

This deliciously moist and fudgy chocolate cake is made with a gluten-free twist that nobody ever suspects: quinoa! I've also made a vegan option of this by using egg substitute and replacing the milk with almond milk. The taste and texture was identical to my non-vegan original! Either version stores well in a sealed container in the refrigerator for up to 1 week or in the freezer for up to 1 month. My favorite frosting for this cake is coconut cream cheese.

Gluten-Free Moist Chocolate Cake image

Steps:

  • Bring water and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer for 10 minutes. Turn off the heat and let sit until quinoa is tender and water is absorbed, about 10 minutes more. Fluff with a fork and cool to room temperature.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 8-inch cake pans and line the bottoms of the pans with parchment paper.
  • Blend butter, milk, eggs, and vanilla extract in a blender until combined. Add 2 cups cooked quinoa and blend until smooth, scraping down the sides of the blender with a rubber spatula as necessary.
  • Whisk sugar, cocoa powder, baking powder, baking soda, and salt together in a bowl. Add quinoa mixture into sugar mixture and whisk until batter is smooth. Pour batter into prepared cake pans.
  • Bake in the preheated oven until a knife inserted into the center of the cakes comes out clean, 40 to 45 minutes. Cool completely in the pans before removing to a plate.

  • Preheat the oven to 350° Fahrenheit and grease two 9-inch round cake pans and set aside. Make the cakes! In a medium bowl, whisk together the gluten free flour, almond meal, baking powder and soda, salt, and cinnamon. Then, in a large bowl, whisk together the oil, melted butter, eggs, sour cream, vanilla, sugar, and brown sugar. Dump the dry ingredients into the wet, and stir together until combined. Scoop 2-3 large spoonfuls of batter into each cake pan and shake until the entire bottom of the pan is covered in a thin layer of cake bater.
  • Then, make the cake swirl. Melt the butter and stir together the butter, brown sugar, cocoa powder, and cinnamon until thick and combined. Then, spoon teaspoonfuls of the swirl mixture on top of the cake batter in each pan until all of the swirl mixture has been used. Pour the remaining cake batter on top of the swirl mixture evenly in each pan and then use a small spoon to swirl the swirl into the batter (or leave as a layer). Bake for 30 minutes or until a knife inserted into the center of the cake comes out clean. Let cool completely before turning out and constructing the cake.
  • While the cake is cooling, make the buttercream! First, melt the dark baking chocolate and then let it cool to room temp (I put it in the fridge for about 10 minutes, taking it out to stir it every couple of minutes). While the chocolate is cooling, in a large bowl, using an electric mixer, beat together the room temp butter and one cup of the powdered sugar until thick and creamy. Add in the remaining powdered sugar one cup at a time and beat until smooth. Add in the cocoa powder, cinnamon, and vanilla extract and beat until smooth. Add in the cooled melted chocolate (if it's still warm, wait until it's cool or it will melt the butter in the buttercream) and the cocoa powder. Beat the chocolate and cocoa powder into the buttercream until combined.
  • Now for the fun part - add in about a 1/4 of a teaspoon of the cayenne and the ancho chili powder at a time and beat to combine, tasting the buttercream after each addition until you reach your favorite spicy point. I added the full teaspoon of each (the butter dulls the spiciness), but you can add more or less depending on your taste.
