GNOCCHI WITH TOMATO SAUCE
This mouthwatering Italian recipe for gnocchi with tomato sauce was adapted from Martha Stewart Living, February 2004.

Steps:
- Heat oil in a large saucepan over medium heat until hot but not smoking. Add onion and garlic; cook, stirring occasionally, until onion is translucent, 5 to 7 minutes. Add wine; cook until most liquid has evaporated. Add tomatoes and juice, tomato sauce, basil, and red pepper flakes. Reduce heat to medium-low; simmer until slightly thick, about 30 minutes. Season with salt and pepper. Remove from heat; cover to keep warm.
- Bring a large pot water to a boil; add 1 tablespoon salt. Add half of the gnocchi; when they rise to the top (after about 2 minutes), continue to cook until tender, about 15 seconds more. Transfer gnocchi with a slotted spoon to pan with sauce. Repeat process with remaining gnocchi.
- Reheat gnocchi over low heat; gently toss. Serve with cheese shavings.
EASY GNOCCHI WITH TOMATO SAUCE
This gnocchi dish works for meatless Monday, and from start to finish can be plated in less than 20 minutes. If desired, add some cheese or other spices and herbs.

- Bring a large pot of lightly salted water to a boil. Cook gnocchi in the boiling water until they float to the top, 2 to 4 minutes.
- Meanwhile, heat olive oil in a heavy skillet over medium-high heat. Add garlic and sauté until fragrant, about 1 minute.
- Add tomatoes with liquid and season with salt and pepper. Cook tomato sauce until slightly thickened, 5 to 10 minutes.
- Once gnocchi float to the top, drain, and transfer to a serving dish. Top gnocchi with tomato sauce and sprinkle with basil chiffonade.

ONE RECIPE, TWO WAYS: GNOCCHI WITH TOMATO SAUCE
You're using frozen gnocchi for this recipe, but dried is fine too. The kids get the stripped-down version, topped with a simple dusting of Parmesan cheese and truckloads of crusty bread. And for the adults, add a good handful of kalamata olives and capers to the tomato sauce, giving it more of a puttanesca feel. You like it, right? I know.

- Tomato Garlic Gnocchi for Kids: Heat the oil in a large pot over medium heat. Add the garlic; bloom until fragrant, 30 seconds.
- Add the tomatoes, basil and a good pinch of salt. Let simmer for 10 to 15 minutes. Transfer the sauce to a food processor and blend until smooth, then pour back into the pot.
- Bring another large pot of salted water to a boil. Add the gnocchi and cook until al dente, 2 minutes. Drain the gnocchi and add it to the tomato sauce.
- At this point, ladle out about a cup of the gnocchi and portion it out into small bowls. Garnish with Parmesan cheese and it's ready for the kids!
- Gnocchi Puttanesca for Adults: To the pot, add the olives and capers and stir to combine. (You could also just sprinkle the olives and capers on top of the gnocchi if you prefer. Either way is fine!)
- The gloriously simple gnocchi puttanesca is ready for the adult faces. Yay! Garnish with fresh Parmesan and basil leaves. Don't forget that crusty bread!
GNOCCHI WITH SMOKEY TOMATO CREAM SAUCE
Steps:
- 1. Cook Gnocchi according to package instructions. 2. Meanwhile, saute bacon in a medium sauce pan until slightly crispy, about 3 minutes. 3. Remove bacon and let soak on paper towels. Drain bacon drippings from sauce pan. 4. Add olive oil and saute garlic for one minute. Stir in spinach until it wilts, about 2 minutes. 5. Add Marinara, Alfredo and the bacon. Heat on low-med until warmed. 6. Pour over cooked gnocchi and sprinkle with grated cheese.
POTATO GNOCCHI WITH HEIRLOOM BABY TOMATO SAUCE
Steps:
- For the gnocchi: Preheat the oven to 350 degrees F. Bake the potatoes until cooked through, 1 to 1 1/2 hours.
- Cut the potatoes in half, scoop out the flesh and push the flesh through a tamis, food mill or ricer. Spread the riced potato flesh on a clean work surface. Season with salt and allow it to release its steam for 2 minutes.
- In a small bowl, whisk together the egg yolks and a generous pinch of salt.
- Sift the flour over the potatoes and mix gently with your hands, lifting and letting the potatoes fall through your fingers. Drizzle the egg yolk mixture over the potatoes. Mix the dough and knead briefly until homogeneous. Roll into a log and cut into manageable pieces. Cover with a towel.
- One piece at a time, roll until approximately 1/2 inch in diameter. Cut into individual pieces about 1 inch long. Shape the gnocchi using a fork or other pasta tool. Lay on a floured tray and reserve. Set aside 2 cups of the gnocchi for this recipe; use the remaining gnocchi immediately or freeze for later use (see Cook's Note).
- For the assembly: Fill a pot with water and season with salt; the water should taste like seasoned broth, not salty like the sea. Bring the water to a boil.
- Add the gnocchi to the boiling water. When they rise to the surface, cook for 1 to 2 more minutes.
- While the gnocchi are cooking, add the Heirloom Baby Tomato Sauce to a saute pan with some red pepper flakes if using and a drizzle of extra-virgin olive oil over medium heat. Add 3 ounces of the pasta water to the saute pan, then add the butter.
- Remove the gnocchi from the pot using a wire skimmer and add to the saute pan. (Note: You can also use a pasta basket or a perforated pan insert.) Toss the gnocchi in the pan to emulsify the butter and finish with some Parmesan and basil. Plate the gnocchi and finish with a drizzle of extra-virgin olive oil.
- In a saute pan, heat the oil slightly. Add the garlic slices and saute for 30 seconds; there should be no color on the garlic. Add the tomatoes to the pan, season with a little salt and saute; the tomatoes will release their juices. Continue cooking until fairly dry. Add the basil and oregano and mix to incorporate. The sauce should be chunky, fresh looking and not too thin. Taste and adjust the seasoning with salt and red pepper flakes if needed.
GNOCCHI WITH CREAMY TOMATO-PORCINI SAUCE

- Place porcini in medium bowl. Pour 1 cup boiling water over. Let stand until porcini are soft, about 30 minutes. Remove porcini from water, reserving soaking liquid. Finely chop porcini.
- Melt butter in heavy medium saucepan over medium-high heat. Add porcini and sauté 3 minutes. Add cream and 3/4 cup soaking liquid, leaving any sediment behind in bowl. Simmer until liquid is reduced to 3/4 cup, stirring occasionally, about 4 minutes. Stir in marinara sauce; bring to simmer. Season with salt and pepper. (Can be made 1 day ahead. Cover; chill. Bring to simmer before using.)
- Cook gnocchi in large pot of boiling salted water until tender but still firm to bite. Drain.
- Add gnocchi to sauce and toss to coat. Divide among 4 plates. Serve, passing Parmesan separately.
GNOCCHI WITH CREAMY TOMATO & SPINACH SAUCE

- Heat the olive oil in a frying pan. Fry the garlic until golden, then add the tomatoes. Season, then simmer for 10 mins. Stir in mascarpone, then cook for 2 mins more.
- Meanwhile, boil the gnocchi according to pack instructions. Add the spinach for the final min of cooking. Drain well, pour back into the pan, then stir the sauce through. Mix well and serve immediately with basil leaves and Parmesan shavings scattered over, if you like.

Steps:
- Chop the onion, carrot and celery.
- Melt the butter in a large frying pan or pot and add the onion, carrot and celery.
- Cook until tender, about 10 minutes.
- Preheat oven to 425 fahrenheit (210 celsius).
- Add the tomatoes,including the juice,to the pan along with salt and pepper.
- Simmer for about 30 minutes until thickened.
- Don't forget to stir occasionally.
- Put in the blender and puree.
- Pour it back into the pan, remove from the heat and stir in cream and nutmeg.
- Season to taste.
- Place the gnocchi in a large baking dish and cover with the sauce. (Precook the gnocchi to package directions if you are using storebought gnocchi.)
- Bake in preheated oven until very hot and starting to brown on top.
- About 7-10 minutes.
- Serve immediatly, sprinkled with parsley.
- The sauce can be made a day ahead up until adding the cream.
- Only add the cream and bake just before serving.
- This makes a great and very tasty vegetarian dish or side dish.
- I like to make it with spinach gnocchi.
- Serve with bread to mop up the delicious sauce.
