GOLDEN APPLE BUNDLES

This recipe is an interesting way to use apples. I usually make them on Fridays, so when family and friends drop in on the weekend, I have a nice dessert to serve. They bake flaky and golden brown outside and moist inside. -Lila Eller, Everett, Washington

Golden Apple Bundles image

Steps:

  • Preheat oven to 450°. In a large bowl, combine apples, walnuts, brown sugar, raisins, flour, lemon zest and cinnamon; set aside. , Roll pastry to 1/8-in. thickness. Cut into 5-in. circles. Spoon about 1/4 cup apple mixture into center of each circle. Moisten edges of pastry with water. Fold over and seal edges with a fork. , Place on a greased baking sheet. Bake 10 minutes. Reduce heat to 400° bake 10 minutes. Brush each with milk and sprinkle with sugar; return to oven for 5 minutes.

  • In a large bowl, cream butter and sugar until light and fluffy. Add egg. Combine the flour, baking soda and cinnamon; gradually beat into the creamed mixture. Fold in apples and pecans., Transfer to a greased 9-in. square baking pan. Bake at 350° for 32-38 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

  • Preheat oven to 350 degrees F (175 degrees C).
  • Layer apple slices in the bottom of an 8-inch glass baking dish.
  • Mix water, butter, flour, and cornstarch together in a bowl until no lumps remain. Stir in brown sugar, cinnamon, and salt until smooth. Pour apples in the baking dish.

  • Set oven to 325 degrees.
  • Grease a 13 x 9-inch baking pan.
  • In a medium bowl beat eggs and vanilla with a fork.
  • Add in both sugars and beat until well combined.
  • Add in the oil and beat until very well combined.
  • In a bowl sift all dry ingredients except 1 cup flour.
  • Stir the dry ingredients into the egg mixture.

  • Place the apples in a large bowl; set aside. In a small saucepan, combine sugar and cornstarch. Stir in apple cider until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. , Stir a small amount of hot filling into egg; return all to the pan, stirring constantly.   • In a large saucepan, combine apples, 3/4 cup apple juice, sugar, cinnamon and apple pie spice; bring to a boil over medium heat, stirring occasionally. Combine cornstarch and remaining apple juice; add to saucepan. Return to a boil, stirring constantly. Cook and stir 1 minute more or until thickened. Remove from the heat. Stir in vanilla.
