RAISIN CUSTARD PIE

A comforting, old-fashioned dessert, this custard pie is one of my mom's best. The fluffy meringue makes it look so special, and the raisins are a nice surprise. -Ruth Ann Stelfox, Raymond, Alberta

Steps:

  • In a large saucepan, combine sugar and cornstarch. Stir in milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat to low; cook and stir for 2 minutes longer. Remove from the heat. Stir a small amount of hot filling into egg yolks; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir for 2 minutes. Remove from the heat; gently stir in raisins and lemon juice. Pour hot filling into crust., For meringue, in a small bowl, beat egg whites on medium speed until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff peaks form. Spread over hot filling, sealing edges to crust. Bake at 350° for 10-15 minutes or until golden brown. Cool on a wire rack for 1 hour; refrigerate for 1-2 hours before serving. Refrigerate leftovers.,

  • In a bowl, cream butter and sugar. Add lemon juice and eggs. Combine dry ingredients; gradually add to creamed mixture. Stir in raisins. Roll into 1-in. balls. , Place on greased baking sheets; flatten with a floured fork. Bake at 400° for 8-10 minutes or until lightly browned.

  • In a medium saucepan, combine sugar and cornstarch.
  • Whisk in egg yolks and milk until throughly combined.
  • Cook over medium heat, stirring constantly, until mixture comes to a boil; boil for 1 minute,.
  • Remove pan from the heat.
  • Add raisins and lemon juice.
  • Pour into pie shell.
  • For meringue, beat egg whites in a small bowl until foamy.
  • Gradually add sugar, 1 tablespoon at a time, beating until stiff and glossy.
  • Spread over the pie filling.
  • Bake at 350°F for 10-15 minutes pr until lightly golden brown.
  • Store in the refrigerator.

GOLDEN RAISIN CUSTARD PIE/COBBLER

This makes two pies or one large cobbler, freeze before baking if you want to save one. This has no vinegar or lemon juice. Cut the recipe in half if you want to make one. Personally when time is limited the cobbler is the fastest and the easiest. Kids seems to like the cobbler the best. I have added sliced apples, oranges and cranberries separately in the custard from time to time. If you like this custard try putting in additions. This is based on my German heritage and original recipe.

Steps:

  • In large saucepan, add the first eight ingredients. Add cofee granules if you wish.
  • Simmer on low at least 10 minutes for the spices to flavor the raisins.
  • In a separate bowl, add milk and cornstarch and wisk until smooth.
  • Add beaten eggs and mix.
  • Dip out a cup of sauce and cool in freezer or refrigerator for a few minutes.
  • Add cooled sauce to the milk, cornstarch and egg mixture.
  • Important step to cool the sauce. Otherwise it will curdle the eggs.
  • Add the mixture to the sauce mixture on the stove and mix.
  • Heat on low until it is thick and shiny custard sauce.
  • Preheat oven 400°F.
  • Prebake bottom crust for 8 to 10 minutes.
  • Take out of oven and pour the custard into prebaked pie shell.
  • Crisscross strips of dough across the top or place top crust on pie and cut slits for steam to escape. Wrap tinfoil around outside edges of crusts.
  • Bake 350°F for about 40 - 45 minutes.
  • Cool before serving.
  • Cobbler Instructions:.
  • Preheat oven 375°F.
  • Spray 9x13-inch glass or metal baking dish with Pam.
  • Pour HOT raisin custard filling in the pan.
  • Top with cobbler topping, by drizzling in long strips until the top is covered.
  • Bake 45 minutes.
  • Serve warm or cold with vanilla ice cream or Schwans Summer Dream Ice Cream, tastes like a dreamcicle.

FANTASTIC RAISIN-COCONUT PIE

This is one of my favorite pie recipes, it's buttery fantastic, and the filling always bakes out perfectly, this recipe makes two pies, good thing cause you will be eating one yourself lol! You can use a frozen pie crust for this, but still prebake for 8 minutes. If you are a cinnamon-lover then use the 4 teaspoons. I promise, you will love this pie!!!! Prep time does not include making the pie crusts.

Steps:

  • Set oven to 400 degrees.
  • Line two 9-inch pie plates with pastry, flute as desired.
  • Prick holes all over the pastry using a fork.
  • Bake for 8 minutes; cool on wire racks.
  • Place the raisins in a saucepan and cover with water, bring to a boil, then remove from heat; set aside.
  • In a mixing bowl cream butter with both sugars.
  • Beat in eggs, vanilla and cinnamon until thoroughly combined.
  • Drain the raisins, then stir into the creamed mixture along with nuts and coconut (the mixture with look slightly curdled).
  • Evenly divide the mixture between the two crusts.
  • Place the pies on a baking sheet.
  • Bake at 350 degrees (bottom oven rack) for 30-35 minutes or until set.
  • Cool and top with whipped cream or ice cream.

  • Grease 9x12 casserole/cake pan.
  • Sift salt and flour together.
  • Add shortening and sugar and cut.
  • Add beaten egg and water.
  • Roll very thin.
  • Line pan (bottom/sides) with crust.
  • Slice washed lemons (as you use them) into paper-thin slices.

  • Heat oven to 425°F. Grease 13x9-inch (3-quart) glass baking dish with shortening or cooking spray. Remove 1 pie crust from pouch; unroll on work surface. Roll into 13x9-inch rectangle. Place crust in dish; trim edges to fit.
