CHILI-LIME POPCORN

Instead of dousing popcorn in butter, give plain kernels heat and zing by sprinkling them with chili powder and lime zest. The snack will be just as tasty but lower in calories -- and cholesterol-free.

Steps:

  • Heat 1 tablespoon oil with 3 popcorn kernels in a large, heavy saucepan over medium heat. When kernels pop, add remaining 1/2 cup kernels. Cook, covered, shaking pan occasionally, until popping slows, 6 to 7 minutes. Remove pan from heat; let stand, covered, 1 minute.
  • Stir together spices, salt, and zest in a small bowl. Toss hot popcorn with remaining tablespoon oil in a large bowl; sprinkle with spice mixture. Squeeze lime wedge over popcorn. Toss to coat.

Steps:

  • Combine popcorn, salt, garlic, and rosemary in a bowl.
  • Melt butter in a large pot on a stove.
  • Add olive oil and heat until boiling.
  • Add popcorn and other ingredients and cook (with a lid) until the popcorn stops popping. (Or slows down to less than 3-4 pops per 10 seconds).

  • Zest and juice the lime before turning on the stove because the process goes quickly once it starts.
  • Add coconut oil and three popcorn kernels to a large pot (that has a lid) set over medium-high heat. Put the lid on the pot.
  • Once the coconut oil melts, stay close by to wait for the first kernel to pop. Once the first kernel pops, add 1/4 tsp salt to the melted coconut oil and pour in the rest of the kernels.
  • Put the lid back on the pot and shake/shuffle the pot back and forth on the stove top by its handles until the popping slows to a few seconds between pops. Immediately remove the pot from heat and crack the lid to allow the steam to escape.
