GRANDMA BEA'S TZIMMES FROM ARTIE'S DELI

Since it opened its doors in October1999, Artie's Deli in New York City has sold traditional Jewish food. One of its most popular dishes during Passover is tzimmes, a sweet stew made with carrots, potatoes, and dried fruit.

Grandma Bea's Tzimmes from Artie's Deli image

Steps:

  • Preheat oven to 350 degrees. Bring a large pot of water to a boil. Place dried fruit in a medium bowl and pour 1 1/2 cups of the boiling water over the fruit. Let stand until soft, about 20 minutes. Drain, reserving 1/2 cup of the liquid; set aside.
  • Add a large pinch of salt to the boiling water. Add carrots and sweet potatoes, and cook until tender when pierced with the tip of a knife, 10 to 12 minutes. Drain, and transfer to a large ovenproof saucepan with a lid. Add the softened fruit and reserved liquid, the marmalade, brown sugar, granulated sugar, honey, cinnamon, vanilla, lemon juice, and a pinch of salt; stir to combine.
  • Cover, and bake for 30 minutes. Remove cover, stir gently, and return to oven, uncovered, until light brown, about 15 minutes more. Remove cinnamon stick before serving.

12 ounces mixed dried fruit (such as prunes, pears, peaches, and apples), cut into thirds
4 medium carrots (about 1 pound), peeled and cut into 3/4-by-3-inch sticks
2 medium sweet potatoes (about 8 ounces each), peeled and cut into 8 wedges each
1/2 cup orange or apricot marmalade
1/3 cup light-brown sugar
1/4 cup granulated sugar
1/4 cup honey
3 cinnamon sticks
1/4 teaspoon pure vanilla extract
Juice of one lemon
Coarse salt

NAVA ATLAS'S SWEET POTATO TZIMMES

In Yiddish, "tzimmes" means a big fuss or commotion. Fortunately, this signature holiday dish, a mélange of sweet vegetables and dried fruits, is not much of a fuss to make.

Nava Atlas's Sweet Potato Tzimmes image

Steps:

  • Preheat oven to 350 degrees.
  • Heat the oil in a large skillet. Add the onion and sauté over medium heat until translucent. Add the carrots and continue to sauté until the onion is golden. Combine with the remaining ingredients except the walnuts in a mixing bowl and stir until thoroughly mixed. Don't worry if the potato slices break apart.
  • Oil a shallow 2-quart baking dish. Pour in the sweet potato mixture and pat in evenly. Sprinkle the optional walnuts over the top. Bake for 45 minutes, or until the top begins to turn slightly crusty. Serve hot.

Grandma Ethel's Brisket with Tzimmes image

Steps:

  • Put oven rack in middle position and preheat oven to 350°F.
  • Pat brisket dry and rub all over with 1 teaspoon salt and 1/2 teaspoon pepper. Heat oil in a 17- by 11-inch heavy roasting pan (3 inches deep) over moderately high heat, straddled across 2 burners, until hot but not smoking, then brown brisket, starting with fat side down, on both sides, about 5 minutes per side. Remove from heat, then add stock and vinegar to pan. Cover pan tightly with heavy-duty foil and braise brisket in oven 2 hours. Add carrots and potatoes to pan and braise, covered, 1 hour. Add prunes and braise, covered, until meat is fork-tender, about 30 minutes more. Cool meat, uncovered, to room temperature, about 1 hour, then chill, covered, at least 12 hours.
  • Put oven rack in middle position and preheat oven to 350°F.
  • Transfer brisket to a cutting board and slice across the grain about 1/4 inch thick. Discard as much fat as possible from surface of vegetables and sauce, then return sliced meat to pan and reheat, covered with foil, until heated through, about 40 minutes. Sprinkle with remaining 3/4 teaspoon salt and remaining 1/2 teaspoon pepper, then arrange meat with tzimmes and sauce on a large platter.

1 (6- to 7-lb) first-cut brisket

4 cups brown chicken stock or reconstituted brown chicken demi-glace
3/4 cup Sherry vinegar
2 lb carrots, peeled and cut crosswise into 2-inch-long pieces

2 3/4 cups dried pitted prunes

  • Preheat oven to 350°. In a greased 13x9-in. baking dish, combine sweet potatoes, carrots and plums. Farfel with Mushrooms from Artie's Deli image

Steps:

  • Preheat oven to 350 degrees. In a medium skillet, heat 2 tablespoons oil over medium-low heat. Add onions, and cook, stirring frequently, until soft and caramelized, 30 to 45 minutes.
  • In a medium saucepan, bring chicken stock just to a simmer over medium heat. Heat 2 tablespoons oil in a large skillet over medium-high heat. Add farfel, and cook, stirring, until toasted and golden brown, about 5 minutes. Transfer to a small roasting pan, and add hot stock. Place in oven, and bake until the liquid is absorbed, about 20 minutes.
  • Meanwhile, heat remaining 2 tablespoons oil in a large skillet; add mushrooms, and cook, stirring occasionally, until mushrooms are golden brown and all the released liquid has evaporated, 5 to 7 minutes.
  • Remove farfel from oven, fluff with a fork, and stir in onions and mushrooms. Return to oven, and cook just until heated through, about 5 minutes more. Season with salt and pepper. Serve.
