MERINGUE TOPPED RICE PUDDING
The key to good rice pudding is its texture. So for the best rice pudding, cook it slowly. Overcooked pudding will have the texture of a solid mass rather than the creamy mixture that makes this dessert so desirable. Long-grained rice works best; try basmati, jasmine, or popcorn rice for even more variety.

- Preheat oven to 400 degrees. Butter a shallow 2-quart baking dish; set aside.
- In a medium-size heavy-bottom saucepan, combine rice, 3 cups milk, 1/4 cup sugar, and salt. Cook over medium heat, stirring frequently, until thick and creamy, about 30 minutes.
- In a liquid-measuring cup, whisk together the egg yolks, remaining milk, and 1 teaspoon pure vanilla extract. Stir into rice. Add raisins and cinnamon. Cook until raisins are heated through, about 2 minutes. Pour rice mixture into the prepared baking dish. Set aside.
- In the bowl of an electric mixer, whisk the egg whites until foamy. Increase speed to high, and gradually add the remaining 1/2 cup sugar, cream of tartar, and remaining 1/2 teaspoon vanilla. Beat until stiff but not dry, 3 to 4 minutes. Using a rubber spatula, spoon meringue on top of the rice, covering entirely. Transfer to the oven, and bake until the meringue is golden brown, about 5 minutes.

- Place rice and raisins in a greased 1-qt. casserole. In a small bowl, whisk the eggs, milk, sugar and nutmeg; pour over rice. , Bake, uncovered, at 375° for 45-50 minutes or until a knife inserted in the center comes out clean. Cool. Pour milk over each serving if desired. Refrigerate leftovers.

My grandma used to make this for my mom, and she made it for me. It's just like hot rice pudding and so yummy served with cinnamon!

- Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and water has been absorbed, about 20. Add 2% milk, evaporated milk, sugar, and butter; stir well and cook until creamy, about 20 minutes longer. Serve sprinkled with cinnamon.

OLD FASHIONED BAKED RICE PUDDING
There are many different ways to make rice pudding and everyone has their favorite. This one is my favorite. It's a very old recipe that I got from a friend. I don't know where it came from originally, but it's delicious! Hope you enjoy it, too.

- 1. Preheat oven to 325 degrees. Grease a 9 X 13 baking dish with butter, set aside.
- 2. In a small bowl whisk sugar and nutmeg together to remove any lumps. Set aside.
- 3. In a large mixing bowl, add eggs and beat well. You don't need to use a mixer, you can do this by hand with a whisk. Add the sugar and nutmeg mixture and whisk again until smooth. Add melted butter, vanilla and salt and whisk until smooth.
- 4. Add 1/2 cup of of milk and whisk thoroughly. Add remaining milk and whisk. Stir in rice and fruit and pour into prepared baking dish.
- 5. Bake for 30 minutes; Stir from the bottom to distribute fruit and rice evenly through pudding. Bake for another 30 minutes or until set. Serve warm plain or with whipped cream or your favorite topping. Refrigerate leftovers.
GRANDMA'S RICE PUDDING
This was my dad's favorite. It's not the thick dry kind served in restraunts. This is creamy with a nice Meringue topping! It's wonderful served warm...but just as tasty served cold!

- Cook rice in 3 cups water until tender...about 20 minutes. Drain and rinse under cold water. Set aside.
- In a 3 quart pot, add 3 1/2 cups milk. Dissolve the cornstarch in remaining 1/2 cup milk and add to pot. Add sugar and salt. Cook over medium heat stirring constantly until thickened. Add rice. Whisk 4 egg yolks and temper with some of the cooked milk mixture. Add eggs to pot and cook for about 2 minutes more. Add vanilla. Pour into 2 quart casserole dish.
- Beat 4 egg whites until stiff. Beat in remaining 1/2 cup sugar. Spread over top of hot pudding, sealing the edges. Bake in a preheated 350 degree oven for about 5-10 minutes until egg whites are nicely browned.

- Combine rice, sugar, raisins, milk, vanilla and salt.
- When thoroughly combined, empty into casserole dish and sprinkle with nutmeg.
- Bake at 325° for 1 hour.
- Using the reserved egg whites, prepare a meringue and spread on top of rice pudding.
- Return the dish to the oven and bake until lightly browned.
