GRANNY ELDA'S DEVILED EGGS
I have tried several of the highly rated recipes here at Recipezaar but so far nothing has beaten the taste and texture of my late grandmother's recipe for deviled eggs. I hope you'll try these and see if you don't love them as much as I do. *Be sure to boil your eggs for a full 15 minutes in rapidly boiling water (no salt added) and the shells will slide right off after they cool.

Steps:
- Hard boil the eggs for 15 minutes in boiling water. Remove water and allow eggs to cool completely before peeling shells. Slice lengthwise and remove yolks into a small bowl. Mash yolks with a fork.
- Add remaining ingredients, blending well. Put mixture into a pastry bag with a large decorative tip and pipe into egg whites. Sprinkle with paprika if desired.
- Refrigerate until ready to serve.

- Place eggs in a single layer in a saucepan and cover with enough water that there's 1 1/2 inches of water above the eggs. Heat on high until water begins to boil, then cover, turn the heat to low, and cook for 1 minute. Remove from heat and leave covered for 14 minutes, then rinse under cold water continuously for 1 minute.
- Crack egg shells and carefully peel under cool running water. Gently dry with paper towels. Slice the eggs in half lengthwise, removing yolks to a medium bowl, and placing the whites on a serving platter. Mash the yolks into a fine crumble using a fork. Add mayonnaise, vinegar, mustard, salt, and pepper, and mix well.
- Evenly disperse heaping teaspoons of the yolk mixture into the egg whites. Sprinkle with paprika and serve.

- Place the eggs in a single layer in a wide saucepan, cover with 1 inch of water and bring to a boil. Lower the heat to medium-low and simmer for 10 minutes. Transfer the eggs to a bowl of ice water to cool completely, then carefully peel them.
- Dip a clean kitchen towel in a small bowl of warm water. Wipe the blade of your knife with the towel to warm it up and to wet the blade. Slice the eggs in half lengthwise, one at a time, wiping the blade clean between each egg. (The warm, wet blade will give you clean cuts.) Remove the yolks to a medium bowl. Mash the yolks with a whisk. Add the mayonnaise, mustard, hot sauce if using and salt and pepper to taste. Whisk until very smooth. Transfer to a large resealable plastic bag or disposable pastry bag and snip off one corner with scissors.
- Place the egg whites on a platter. Pipe the filling evenly into the egg whites. Top with chives and a sprinkle of paprika. Refrigerate for 20 to 25 minutes prior to serving.

Steps:
- Hard boil eggs and peel. To make eggs peel easier I peel them while they are still hot under cold running water. Cut eggs in half lengthwise and remove egg yolks.
- Combined rest of ingredients together. Add eggs to mixture and beat with mixer until smooth.
- Stuff egg yolk mixture back into egg white halves. Sprinkle with paprika if desired.

- Rinse eggs with warm water, and place in a small saucepan. Cover with cold water, place the pan over medium-high heat and bring to a boil. Turn off heat, cover and let sit for 10-12 minutes. Drain, rinse under cold water and peel. Cool in the refrigerator, loosely covered, for 15 minutes.
- Halve eggs lengthwise, and carefully scoop out yolks. Place yolks in a bowl, and mash with a fork. Add mustard, Tabasco, salt, pepper and snipped chives. Stir in mayonnaise.
- Fill each egg white with about 1 1/2 teaspoons of the egg-yolk mixture and dust the top with paprika. Arrange in a spoke design on a platter; garnish with whole chives.

- Place the eggs in a pot and fill with cold water until the eggs are just covered. Bring the pot to a boil, then cover, remove from heat, and let sit for about 12 minutes.
- Transfer the eggs to a bowl of ice water for about 3 minutes, then peel them and cut them in half. Transfer the egg yolks to a bowl, and set the cooked egg whites aside.
- Mix the mayonnaise, mustard, relish, salt, and pepper with the yolks and transfer to a piping bag. (Alternatively, use a zip-top bag with a corner cut off.)

SIMPLE DEVILED EGGS, GRANDMA STYLE
Since we had chickens on the farm there were lots of eggs and hence, lots of deviled eggs. This is Grandma'e easy version.

- 1. Place eggs in a large saucepan, cover eggs with cold water, and bring to a boil. Cook 2 minutes. Cover pan and remove from stove. Allow to sit at room temperature until water has completely cooled.
- 2. Peel eggs under cold water and slice in half lengthwise. Carefully remove yolk and place in small mixing bowl. Reserve cooked egg whites. Mash yolks. Add mayonnaise, mustard, salt, and pepper together.
- 3. Optional: Add pickle relish if using. I love the relish and truly believe Grandma made hers this way. However my sister believes this was not in Grandma's recipe.
- 4. Spoon yolk mixture into egg white shells and sprinkle with paprika. Chill and serve cold.
