RUBY RED GRAPEFRUIT BARS
I found the recipe for these bars at www.cookiemadness.net, made them, LOVED them, and thought they were too delicious not to post on Recipezaar. They're similar to lemon bars, yet sweeter and less tangy. Hope you enjoy them as much as I did!

Steps:
- Preheat oven to 350 degrees F. Line an 8 inch square metal pan with non-stick foil or parchment.
- Combine flour, salt and powdered sugar. Cut in butter (food processor works well) until mixture is coarse and crumbly. It should be very dry.
- Press into pan and bake for 18 minutes or until golden brown around edges.
- Beat together eggs, sugar, grapefruit juice,and grapefruit zest. **Add more zest for a more "grapefruity" flavor.
- Whisk in baking powder, making sure you whisk out any lumps, then whisk in flour.
- Bake for 20-25 minutes or until set.
- Cool completely, then sprinkle top with powdered sugar. Lift from pan and cut into squares.

- Set rack in the middle of the oven and heat the oven to 350 degrees. Prepare an 8x8 inch baking pan using Smitten Kitchen's "sling" method. Cut 2 pieces of parchment the same width as the bottom of your pan, but longer on each end so that when you lay the parchment in the pan, extra parchment paper hangs over both sides. Lay the other piece of parchment going in the opposite direction of the first.
- Beat together the butter and sugar on high speed until light and fluffy, about 3 minutes, scraping the sides occasionally. Add the flour and salt and mix on low speed until combined. Transfer the dough to the bottom of the pan and use your fingers to press it evenly into the space.
- Meanwhile, make the filling. In a medium bowl add the eggs and sugar. Whisk vigorously for about 1 minute until slightly thick. Add the flour, grapefruit juice and zest. Whisk well and pour the filling over the warm baked crust.

- Preheat the oven to 350° F. Lightly grease either an 8 x 8-inch or a 9 x 9-inch square cake pan with unsalted butter. **NOTE - If you are baking in a non-stick cake pan you must line with parchment; line the cake pan with parchment paper that overhangs 2-inches on both sides.
- Combine the flour, confectioners sugar, brown sugar, salt, and butter in a food processor. Pulse until mixture begins to clump together. Remove the dough from the barrel and press onto the bottom of the prepared cake pan. Bake at 350˚F for 20 minutes, or until lightly browned on the top.
- In a clean and dry food processor barrel, pulse the sugar and flour together. Add the eggs pulsing well. Add the zest, juices, and pulse again until all is incorporated fully. **NOTE - the bars will bake up only mildly pink if food coloring is not used. Add 3 to 5 drops of PINK food coloring if you want the bars pink as I have in my photos. 3 drops yielded me this nice pretty pale pink.
