Greek Chicken Pilaf image

Steps:

  • In a skillet over medium heat, add oil and let it heat up a bit.
  • Add in onion and garlic; stir/saute for 5 minutes or until tender.
  • Add in rice and cook/stir 1 minute longer.
  • Add in tomato sauce, lemon juice, oregano, sugar, salt, and pepper; stir to combine.
  • Transfer mixture to a 2-quart casserole dish that has been lightly sprayed with non-stick cooking spray.
  • Add in chicken and broth; stir to combine.
  • Cover and bake in a 350° oven for ABOUT 1 hour or until the liquid is absorbed.
  • Sprinkle with feta cheese and olives.
  • Let rest 5-10 minutes before serving.

1/4 teaspoon sugar
1/4 teaspoon salt, to taste
fresh ground pepper
2 1/2 cups cubed cooked chicken breasts
1 1/2 cups chicken broth
1/4 cup crumbled feta cheese
1/4 cup pitted kalamata olive

Easy Pilaf image

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Prepare a 1 quart baking dish with butter.
  • Melt the butter in a large skillet over medium-high heat. Fry the onion in the butter until translucent, 3 to 5 minutes. Stir in the rice; cook until the rice is slightly golden. Pour in the chicken broth. Season with the salt. Simmer another 5 minutes. Transfer to the prepared dish.
  • Bake in the preheated oven until the broth is completely absorbed, 35 to 40 minutes. Fluff with a fork to serve.

Steps:

  • Before you start have chicken broth cans opened and ready to pour.
  • Melt butter in large sauce pan.
  • Add rice and stir constantly until golden browned (Use Med-Hi Heat).
  • Quickly add chicken broth and lemon juice and cook uncovered until liquid is absorbed (about 25 minutes.).

3 cups converted white rice (Uncle Ben's is the best)
3/4 cup butter
6 cups chicken broth
3 large lemons, juice of (add 1 more lemon if you like it extra lemony)
