GREEN CHILI FLAUTAS

Easy, tasty, baked! I like to make a double batch and freeze half for nights when I'm less than thrilled about cooking. Recipe is from Taste of Home.

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Add the cheese, chilies and cumin; set aside.
  • Warm the tortillas; brush both sides with some of the butter. Spoon about 1/3 cup beef mixture down the center of each tortilla. Roll up tightly; place seam side down in a greased 13-in. x 9-in. baking pan.
  • Bake, uncovered, at 500° for 5-7 minutes or until golden brown, brushing once with remaining butter. Serve with toppings of your choice.

GREEN CHILE FRITTATA

This rich recipe is great for either a brunch or breakfast. You can make this a day ahead if you want to serve it for an early morning breakfast. Just reheat in the microwave. You may use any combination of cheese in this recipe, even non-fat.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a large bowl, mix the eggs, flour, baking powder, and salt. Stir in the green chile peppers, cottage cheese, Cheddar cheese, and melted butter. Pour into the prepared baking dish.
  • Bake 15 minutes in the preheated oven. Reduce heat to 325 degrees F (165 degrees C), and continue baking for 35 to 40 minutes. Cool slightly, and cut into small squares.

Steps:

  • Mix chiles, cheese, chile sauce, corn and sugar in a medium bowl. Place about 2 tablespoons of filling down center of a tortilla and roll it up tightly. Secure with a toothpick and place seam side down on a plate. Roll up all of the flautas and fry 3 or 4 at a time in 350 degree hot oil until golden brown and crispy. Drain on paper towels and serve immediately.

1/2 cup canned green chili (or roasted, peeled and seeded green chiles coarsely chopped)
1 cup monterey jack cheese
1 cup sweet corn
1/2 cup green chili sauce
1 teaspoon sugar

  • If you're poaching the chicken, add 2 chicken breasts to a saucepan and cover with cold tap water. Bring to a boil and then reduce heat to let simmer for 20-25 minutes or until the chicken is cooked through. You can optionally add some flavoring to the water -- for this batch I added salt, pepper, onion and cilantro. Once cooked, set the chicken breasts aside to cool and then use two forks to shred them.
  • To make the Avocado Salsa Verde, start by removing the husks and stems from the tomatillos. Give them a good rinse and roast them in a 400F oven until they start to turn army green in color, approx. 10-15 minutes.
  • Add the roasted tomatillos to a blender along with 1/2 onion, 1 garlic clove, 10-12 sprigs cilantro, and 2 serrano peppers (or less if you want a milder version). Combine well and taste for heat level, adding more serrano if you want more heat. Add the flesh of the avocado to the blender and combine well. Salt to taste.
  • In a mixing bowl, combine the shredded chicken with the following ingredients: 2 cups shredded cheese, 1/4 onion finely chopped, 1/2 cup pickled jalapenos finely chopped, 2 teaspoons chili powder, 2 teaspoons Mexican oregano, 1 teaspoon salt, freshly cracked black pepper. Mix together well.
