GIMME S'MORE GRILLED BROWNIES
Your camping staycation officially begins when you fire up the backyard grill to make these s'mores-inspired brownies.

Steps:
- Heat grill for indirect grilling: Light one side of grill, leaving other side unlit. Close lid; heat grill to 350ºF.
- Microwave unsweetened chocolate and butter in large microwaveable bowl on HIGH 1 to 1-1/2 min. or until butter is melted; stir until chocolate is completely melted and mixture is well blended. Stir in sugar. Blend in eggs. Add flour; mix well. Pour into 9-inch square disposable foil pan sprayed with cooking spray.
- Place on unlit side of grill; close lid and cook 20 min. Top with combined cracker pieces and marshmallows; cook 25 to 30 min. or until toothpick inserted in center of brownie comes out with fudgy crumbs and marshmallows are golden brown. (Do not overcook.) Remove from grill. Immediately top with chocolate morsels; cool completely.

- Cut unpeeled bananas crosswise in half, then lengthwise in half. Place quartered bananas on an oiled grill rack, cut side down. Grill, covered, over medium-high heat on each side until lightly browned, 2-3 minutes. Cool slightly., In a small bowl, beat cream cheese, brown sugar and peanut butter until smooth., To serve, remove bananas from peel; place over brownies. Top with cream cheese mixture, ice cream, fudge topping and peanuts.

"WHATEVER FLOATS YOUR BOAT" BROWNIES!
These are absolutely the chewiest, moistest, fudgiest brownies ever! I have tried adding so many different things to the batter, and they ALWAYS comes out great. They are also great without ANY add-ins! BUT by varying the add-ins, you can make different brownies every week (or day!!) SUPER EASY PREP! So, add "whatever floats your boat" and you will not believe how yummy they come out :) Oh, and the recipe doubles just fine--use a 9 x 13 inch pan instead and add a few more minutes of baking!

Steps:
- Preheat oven to 350°F.
- Grease an 8 inch square pan or line with foil.
- In a medium bowl combine melted butter and cocoa and stir until cocoa is dissolved.
- Add sugar and mix well.
- Add eggs one at a time and stir until well combined.
- Stir in vanilla, flour and salt until you no longer see any flour (do not overmix).
- Fold in "WHATEVER FLOATS YOUR BOAT"!
- Spread in pan and bake for approximately 25 minutes.
- DO NOT OVER-BAKE -- your brownies will come out dry. Adjust time/temp accordingly for your oven. If you do the knife/toothpick test, it should come out with moist crumbs, not clean.
- Cool completely before cutting into squares.
- For vegetarian omit the marshmallows.
- For double recipe, bake in 9x12 pan and add 5 minutes to baking time.

- If using a charcoal grill, open bottom vent of grill completely. Light charcoal chimney starter filled with briquettes. When briquettes are covered with gray ash, pour onto bottom grate of grill, and then push to one side of grill. Adjust vents as needed to maintain an internal temperature of 350°F to 400°F. Add flour mixture; stir gently until just combined.
- If grilling, place skillet on grates over the side without the coals (or the unlit side of a gas grill). Grill, covered, until a wooden pick inserted in center of brownies comes out almost clean (it will have crumbs but should not be wet), 40 to 45 minutes. If using an oven, bake in preheated oven about 35 minutes. Remove from heat; cool in skillet 10 minutes. Cut into wedges and serve with ice cream, if desired.
