Steps:

  • Add 2 tablespoons of the butter to a skillet and melt over medium-high heat. Add the apples and saute for 5 minutes. Remove to a plate and set aside.
  • In the same skillet over medium heat, add the brown sugar and the remaining stick of butter. Stir it around until the butter melts and the sugar dissolves, then pour in the cream. Stir it around and let it bubble up and thicken for about a minute. Turn the heat to low and add the apples back to the skillet. Sprinkle in the cinnamon, stir the mixture and let it thicken for another 1 to 2 minutes.
  • Spoon big scoops of vanilla ice cream into sundae glasses and drizzle over the caramel apple sauce.

Steps:

  • Preheat the oven, with a pizza stone if using, to 400 degrees F. For the flatbread: Stretch each piece of dough thinly, dusting with flour. Roll out each dough. Transfer to a pizza peel or upturned baking sheet dusted with flour or cornmeal. Par-bake for about 4 minutes each. Reserve. For the apple topping: Set a large saute pan over medium-high heat. Add the butter and once foaming, add the apples and cook until lightly browned on the outside, about 2 minutes. Add the brandy to deglaze (take care as it may flame), and then add the brown sugar, golden raisins, lemon juice, vanilla extract, cinnamon and salt, and cook over low heat until the apples are tender and sauce has thickened slightly, 5 to 7 minutes. Remove from the heat and top the par-baked dough with the apple topping. Place back into the oven for another 2 minutes. Serve warm. To serve: Cut with a pizza wheel, dust with confectioners' sugar and serve warm with vanilla ice cream.
  • In the bowl of a stand mixer, dissolve the sugar in the warm water. Sprinkle the yeast on top. Let stand until foamy, about 10 minutes.
  • Add the olive oil and salt to the yeast mixture, then use the dough hook to mix in the flour. Mix until the dough comes together. Add more flour as needed and allow the machine to knead the dough until smooth.
  • Turn the dough onto a floured surface and knead until smooth. Place the dough in an oiled bowl and turn to coat the surface. Cover the bowl with plastic wrap and let stand in a warm place until the dough has doubled in size, about 1 hour.
  • Turn out the dough onto a floured surface. Divide and form the dough into 4 smooth, tight balls. Cover loosely with a floured kitchen towel and set in a warm place to rise again for 30 to 45 minutes. Once risen, use immediately or wrap and freeze until ready for use, for up to 2 weeks.

Steps:

  • Melt the butter in a saucepan over medium-high heat until it foams. Add the pecans and toss to coat evenly; toast for about 1 minute. Add the brown sugar and swirl until it melts; toss to coat the nuts. Add the bourbon and maple syrup and remove from the heat. Swirl the sauce to mix, and then allow to cool slightly in the pan. Caramel Apple Grilled Mini Monkey Breads image

Steps:

  • Preheat a grill for indirect medium-high heat.
  • Brush 8 cups of a 12-cup muffin tin with 2 tablespoons of the butter and sprinkle each one with some sugar until lightly coated. Separate the biscuits, cut each one into quarters and transfer to a large bowl. Add the apple to the bowl and then toss to combine with the remaining 4 tablespoons butter followed by the 1/4 cup sugar. Evenly divide the dough-apple mixture among the prepared muffin cups (about 4 pieces of dough per cup) and top with any butter and sugar left in the bowl. Press a caramel candy into the middle of each muffin cup and then firmly press everything into the bottom of the cup.
  • Cover the muffin tin with foil and place on the indirect side of the grill. Cover and cook for 15 minutes, rotating halfway through. Uncover and continue to cook until bread is golden brown and cooked through, about 20 minutes more.
  • Let cool in the tin for 5 minutes. Being careful of the hot caramel, use a spoon to scoop out each mini monkey bread to a serving platter. If the caramel has cooled too much and the bread sticks to the tin, put it back on the grill for 1 to 2 minutes.

Steps:

  • Preheat grill to medium.
  • In a small saucepan add butter, brown sugar, apple cider, cinnamon, ginger, and salt. Place onto grill until butter melts. Mix together until well combined.
  • Place pears directly onto grill for 2 to 4 minutes. Turn and cook on the other side. Brush both sides of the pears with the butter mixture to glaze. Immediately take pears off the grill after glazing and place on a plate.
  • Scoop ice cream into 4 serving bowls. Top with pears, pecans and whipped cream. Drizzle the remaining butter mixture on top and serve.

Grilled Biscuit Sundae with Peaches and Blueberries image

Steps:

  • Brush 4 of the biscuits with the melted butter and sprinkle with the demerara sugar, then bake according to the package directions (save the remaining biscuits for another use). Remove from the oven and allow to cool.
  • Meanwhile, in a small saucepan, combine the blueberries, granulated sugar, lemon juice and salt. Bring to a simmer, then cook, stirring frequently and using the back of a wooden spoon to mash the berries, until the juice has thickened, 5 to 7 minutes. Remove from the heat and set aside to cool slightly.
  • Meanwhile, heat a grill pan or grill to high heat and oil the grates.
  • Brush the peaches with oil and add to the grill, cut-side down. Cook, without moving the peaches, until charred grill marks develop, 4 to 5 minutes. Flip the peaches, then cook until the peaches have heated through but still hold their shape, another 1 to 2 minutes. Remove from the grill and cut into bite-size pieces, then set aside.
  • Split the biscuits open and place on the grill cut-side down. Grill until grill-marked, about 2 minutes. Tear the biscuits into large chunks.
  • In parfait glasses, layer the biscuits chunks, a scoop of ice cream and blueberry sauce. Continue with another set of layers and finish with the grilled peaches and dollops of whipped cream.

  • In a large saute pan over medium heat, melt 2 tablespoons butter. Add apples and saute, turning occasionally for even cooking, until slightly golden and softened but still holding its shape, about 10 to 12 minutes.
  • Meanwhile, in a small saucepan over medium heat, add sugar and water. Stir occasionally and watch closely until color just starts to change to golden-amber, about 6 to 8 minutes. Remove pan from heat and carefully add cream (mixture will bubble and release steam). Gently stir until bubbles subside slightly, and put back over very low heat. Steps:

  • Place the shredded cabbage in a large, heat-proof mixing bowl. In a medium saucepan, combine the vinegar, sugar, pickling spice, 2 teaspoons salt and 1 1/2 cups water. Bring to a boil, stirring to dissolve the sugar and salt, then pour the mixture over the cabbage. Set a plate on top of the cabbage to weight it down. Refrigerate and leave to pickle for 4 hours.
  • Preheat a grill or grill pan to high. Quarter the apples and cut out the cores. Toss the apples in a bowl with the lemon juice and olive oil and season with salt and pepper. Okay, so I know that we really cheated on the sauce by using a jarred sauce, but this is exactly what we served to some guests for a last minute dessert after a meal of "Brats--Our Way" and grilled corn on the cob, and they loved it! For four adults and two small children, this really was just barely enough, and we could have probably eaten another pineapple. I noticed that most other pineapple recipes here involve marinating the pineapple or brushing it with something just before grilling. We've never tried that, but really enjoy the simple, fresh taste of the pineapple without other added ingredients. If you've never tried grilled pineapple, you owe it to your tastebuds to try one of the recipes for it here on the zaar!

Caramel Grilled Pineapple Sundaes image

Steps:

  • Peel, core, and slice pineapple into 3/4 inch to 1 inch thick rings. If your pineapple is already cored and sliced in a way that makes it impossible to cut into rings, just cut into big wedges. Pieces that are cut too small make it difficult to grill without losing pieces in the grill, as the pineapple will soften somewhat.
  • Grill on a lightly oiled BBQ grill grate over medium to high heat, turning once, until the pineapple has nice grill marks, is warm, and slightly softened. Time will vary depending on your grill, but your eyes and your nose will tell you when it's ready!
  • Warm caramel ice cream topping in microwave according to package directions.
  • Assemble sundaes by placing a portion of pineapple in the bottom of each bowl. Top with a large scoop of vanilla ice cream, end drizzle a large spoonful of warm caramel topping over the top, and serve immediately.
  • Enjoy the compliments from your guests.

  • Make the apples: Toss apples with lemon juice in a large bowl, and let stand. Melt butter in a large skillet over medium heat. Add sugar, and stir until sugar dissolves and mixture is dark amber, about 15 minutes.
  • Stir in apples, their juices, and the salt. Reduce heat to medium-low, and cook, stirring occasionally, until apples are softened, about 10 minutes. Stir in Calvados and 1/2 cup cream. Transfer apple mixture to a bowl.
  • Prepare an ice-water bath. Set the bowl in the bath, and let apple mixture cool, stirring occasionally, until mixture is cold and sauce has thickened, about 20 minutes. Use immediately (or refrigerate overnight).
  • To assemble: Whisk remaining 1 cup cream to medium peaks. For each serving, place 2 caramelized apple wedges in a sundae glass. Top with a scoop of cinnamon ice cream, 2 caramelized apple wedges, and some pecan-oat crumble. Repeat ice cream, apple, and crumble layers. Top with whipped cream.
