FRIED GREEN TOMATO SANDWICH

My favorite way to eat fried green tomatoes! They're layered with red tomatoes and pepperjack cheese between 2 slices of bread, and then grilled to ooey-gooey, cheesy, crunchy perfection.

Fried Green Tomato Sandwich image

Steps:

  • Dip slices of green tomato into beaten egg, then cover in cornmeal to coat, shaking off the excess. Heat the oil in a large skillet over medium heat. When the oil is hot, add the tomato slices. Cook until golden brown on each side, 2 to 3 minutes per side. Remove from the skillet and drain on paper towels.
  • Wipe out the skillet with a paper towel and place it over medium heat. Spread butter onto one side of each slice of bread. Place half of the slices butter side down in the skillet. Stack 3 slices of green tomato, 3 slices of red tomato, a slice of pepperjack cheese and a few jalapeno slices onto each piece of bread in the skillet. Top with the remaining slices of bread with the butter on the outside. Cook until the bottom is golden. Flip the sandwiches and cook until golden brown on the other side.

Grilled Brie and Goat Cheese with Bacon and Green Tomato image

Steps:

  • Place the bacon in a large skillet or griddle and cook until golden brown and crisp. Remove to a paper towel-lined plate. Break each piece into fourths and set aside.
  • Heat a cast iron griddle or cast iron pan over medium heat.
  • Spread butter on 1 side of each slice of bread. Layer 4 of the slices of the bread with 3 to 4 slices of brie, 2 tomato slices, watercress, 2 slices goat cheese, and 4 slices of broken up bacon and season with salt and freshly ground black pepper. Place the remaining bread slices on top, butter side up and cook on the griddle until golden brown on both sides and the brie has melted.

16 slices center-cut bacon, cut into 1/2-inch thick pieces
2 sticks unsalted butter, at room temperature
8 slices Pullman bread, sliced 1-inch thick
8 to 12 ounces really good quality brie
2 green tomatoes, sliced 1/4-inch thick

Steps:

  • Slice tomato so that you have three nice slices. Dip in cornmeal.(add s&p, if using, to the cornmeal before dipping).
  • Heat a non-stick skillet with just enough oil to fry tomatoes. Fry until brown on both sides. Remove and set aside.
  • Wipe skillet clean and return to heat.
  • Butter one side of each piece of bread.
  • Place one slice, buttered side down in skillet and immediately top with cheese and fried tomato slices.
  • Top with second piece of bread, buttered side up. Press down with spatula. Turn when underside is golden brown.
  • Cook on second side until golden brown and cheese has melted.
  • I like using Munster cheese and seven-grain bread.

Steps:

  • Brush both sides of each bread slice with some oil. Cut enough 1/4-inch-thick slices from feta to cover 2 slices of bread and cut tomato into 1/4-inch-thick slices. Assemble 2 sandwiches with feta and tomato slices, seasoning filling with oregano and LOTS of pepper.
  • In a 12-inch nonstick skillet heat 1 tablespoon oil over moderate heat until hot but not smoking and cook sandwiches until golden, about 2 minutes on each side.
  • Variation: Adding sliced or chopped Kalamata olives is a delicious addition.
  • Note: This is a grilled sandwich that is delicious served at room temperature too.

  • Using a serrated knife, slice the green tomatoes to a 1/4-inch thickness. Sprinkle the tomatoes with a bit of salt and allow them to sit on a few paper towels to drain.
  • Now we're going to make our assembly line. In one bowl, add the flour. In another, whisk together the cornmeal, bread crumbs, salt, cayenne and black pepper. Lastly, whisk the egg in another bowl (you may need another egg--add it later if you need to).
  • Heat a few tablespoons of oil in a pan that is set over moderately medium heat. Dip the slices of tomatoes in the flour, and then the beaten egg and then, for its last trip, to the bowl with the bread crumbs. Make sure the tomatoes are completely coated, sides of the tomatoes included! Don't be afraid to use your other hand to sprinkle the bare spots, if needed.
  • Transfer the tomatoes to the hot oil and fry on each side for about 1 minute, until crispy and golden brown. Place them on a bed of paper towels to drain. Add any more oil to the pan if needed and continue with frying the remaining slices up.

  • Dip a tomato slice into the flour, tossing so both sides and all of the edges are coated. Dip in the buttermilk then dredge in the cornmeal bread crumb mixture, gently patting both sides so the coating adheres. Place on a wire rack and continue with the rest of the tomatoes.
  • Pour enough vegetable oil into a large skillet or cast iron pan to fill it about 1/2 inch from the bottom. Heat to medium high until the oil is about 350 degrees F. I test my oil with a candy thermometer.
  • Fry the tomatoes in batches, about 3-4 at a time, flipping once so both sides are lightly browned.
