GRILLED CHICKEN BREAST AND PINEAPPLE
I have been on the lookout for a recipe that I could make myself. Infusing pineapple with teriyaki was delicious! It is the perfect amount of sweet and salty and the longer you let your chicken marinate, the more delicious it becomes! This grilled recipe is now a staple at our house - everyone loves it. Serve with peas, rice, or salad.

- Combine chicken, pineapple rings, soy sauce, lime juice, pineapple juice, honey, ketchup, ginger, sesame oil, and garlic in a large resealable plastic bag. Marinate for 4 hours, up to overnight.
- Preheat an outdoor grill for medium heat and lightly oil the grate.
- Cook chicken on the preheated grill until browned and no longer pink in the center, flipping as needed, about 15 minutes. Add pineapple rings to the grill during the last 5 minutes of cooking time. An instant-read thermometer inserted into the center of the chicken should read at least 165 degrees F (74 degrees C).

- In a large bowl, combine the first six ingredients; add chicken and turn to coat. Cover and refrigerate 1-2 hours., Drain and discard marinade. - For the chicken and marinade: Mix up the oil, Worcestershire sauce, chile powder, garlic, lemon juice, onions and some salt and pepper in a bowl and pour into a resealable plastic bag. Add the chicken to the bag and marinate for at least 2 hours and up to 4.
- Twenty minutes before cooking, fire up the grill.
- For the sandwich bar fixins: Set out separate plates or bowls of the honey mustard, pico de gallo, crumbled bacon, tomatoes and red onions.
- Grill the breasts for 2 to 3 minutes on the first side, then turn. Lay half a slice of cheese on each breast and grill until cooked through, a further 2 to 3 minutes.
- Serve the chicken with rolls and fixins and let everyone build their own sliders.

- Drain pineapple, reserving 2 teaspoons juice. In a large bowl, combine carrot, onion, 1 tablespoon soy sauce, garlic powder and drained pineapple. Add chicken; mix lightly but thoroughly. Shape into eight 1/2-in.-thick patties., Place rolls on a greased 15x10x1-in. baking pan, cut side up. Broil 4 in. from heat until toasted, 30-60 seconds. Remove from pan; keep warm., Add burgers to same pan. Broil 4 in. from heat until a thermometer reads 165°, 4-6 minutes on each side., Meanwhile, in a small bowl, mix sour cream, mayonnaise, ginger, remaining soy sauce and reserved pineapple juice. - Marinate the chicken in the juice from the canned pineapple, 1-2 tablespoons of chopped fresh cilantro, juice from half a lime, and chopped red onion. Save the rest of the onion for slices on the sliders. Marinate anywhere from a few hours to overnight.You can use chicken thighs, or butterflied chicken breast. Be sure to cut the chicken breast into pieces that will fit onto the slider rolls.
- Cook the chicken and pineapple slices on the grill until 165° with a meat thermometer. You can use a skillet on the stove top also.
- Layer the bottom Hawaiian roll, mayonnaise, lettuce, chicken, pineapple, red onion, barbecue sauce, and top of the Hawaiian roll. If you are gluten free like me or on a Whole30 plan, use the lettuce as a wrap and leave out the Hawaiian roll. Be sure your mayo and BBQ sauce is compliant! Stick a toothpick in there to hold it all together and enjoy!
