CHIPOTLE BURGERS WITH AVOCADO SALSA

Turn everyday burgers into something new with a spicy twist! More spiciness? Try adding pepperjack cheese on top of the meat before adding the avocado salsa. Meat can be grilled or browned in skillet.

Chipotle Burgers with Avocado Salsa image

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Place half the chopped cilantro into a large bowl and mix with ground beef, chipotle peppers in adobo sauce, mushrooms, and Worcestershire sauce. Set remaining cilantro aside. Form the beef mixture into 4 patties.
  • Lightly toss remaining cilantro in a bowl with avocado, onion, tomato, jalapeno peppers, lime juice, salt, and black pepper.
  • Grill burgers on the preheated grill until browned and no longer pink inside, about 5 minutes per side. Serve the burgers on onion rolls topped with avocado salsa.

Steps:

  • Prepare grill for cooking over medium-hot charcoal (moderate heat for gas); see "Grilling Procedure," below.
  • Meanwhile, open any whole chipotles and discard seeds, then mince chipotles.
  • Mix chipotles (with sauce), beef, onion, and salt with your hands, then form mixture into 4 (3/4-inch-thick) patties.
  • Grill burgers on lightly oiled grill rack, covered only if using gas grill, turning over once, 4 minutes total for medium-rare. Grill English muffins, cut sides down, until grill marks appear, about 30 seconds. Serve burgers in English muffins.
  • Grilling Procedure
  • If using a charcoal grill, open vents on bottom of grill, then light charcoal. When charcoal turns grayish white (about 15 minutes from lighting), hold your hand 5 inches above grill rack to determine heat for charcoal as follows:
  • Hot: When you can hold your hand there for 1 to 2 seconds
  • Medium-hot: 3 to 4 seconds
  • Low: 5 to 6 seconds
  • If using a gas grill, preheat burners on high, covered, 10 minutes, then, if necessary, reduce to heat specified in recipe.

Cheddar Jalapeno Chicken Burgers with Guacamole image

Steps:

  • In a large bowl, combine the first nine ingredients. Add chicken; mix lightly but thoroughly. Shape into four 3/4-in. thick patties. , Moisten a paper towel with cooking oil; using long-handled tongs, rub on grill rack to coat lightly. Grill burgers, covered, over medium heat 7-8 minutes on each side or until a thermometer reads 165°. Serve on buns with guacamole and additional toppings as desired.

Spicy Guacamole with Chipotle image

Steps:

  • Cut open avocados and scoop all the flesh into a large bowl. Mash with a bean masher or spoon until there are no large chunks of avocado left.
  • Squeeze lime juice over the avocado. Add cilantro and 1 chipotle pepper with some adobo sauce. Season with salt and pepper; mix to combine. Mix in red onion and jalapenos. Add tomato and mix gently to combine. Chill before serving garnished with remaining chipotle pepper and adobo sauce.

  • Cut the avocado in half and remove the pit. Scoop the flesh out of the skin with a spoon and place it in a small mixing bowl. Mash the avocados with a fork until mostly smooth. Finely chop the red onion and cilantro. Stir the onion, cilantro, salt and lime juice in with the avocado. Cover with plastic wrap and store in the refrigerator for up to 12 hours.
  • Place the meat in a large mixing bowl. Add the cumin, chili powder, cayenne, salt, and salsa. Use your hands to thoroughly combine the ingredients. Chop the onion and chipotle pepper and add to the mixing bowl. Mix well. Add the eggs and tortilla chips and use your hands to thoroughly mix ingredients again.
  • Form the meat into round patties, about 1 1/2 inches thick. Heat a nonstick frying pan over medium heat. Cook the burgers, 2-3 at a time (or however many fit in the pan). Cover the pan with a lid and allow the burgers to cook for 5 minutes, checking once or twice to avoid burning on the bottom. After 5 minutes, the bottom side should be browned and the there should be little to no pink on the top side. Flip the burgers and cook uncovered for another 2-3 minutes to achieve desired browning. Also, this is a good time to add the cheese to the tops of the burgers because it will melt slightly in the hot pan.
  • Serve burgers on toasted buns (just 3-4 minutes under the broiler will do the trick) and top with a dollop of chilled guacamole.
