Steps:
- In a large skillet brown the chicken in the oil over medium heat for 20 minutes. Sprinkle with 1/2 tsp salt and the black pepper. Remove the chicken and set aside. In the same skillet with the chicken fat, fry the onion, garlic and tomato for 2 minutes.
- Add the rice and fry for 2 minutes more. Add the carrots, olives and capers and mix everything together.
- Pour in the broth and chicken pieces.
- Bring to a boil, reduce heat to low, cover skillet and simmer until broth has been absorbed, about 10 minutes. Add the green peas.
- Cover skillet with aluminum foil and punch 8 holes in the top to allow steam to escape. Bake in a 300F oven for 30 minutes. Fluff up the mixture once or twice during the baking time.
- Serve warm. Decorate the surface with the pimiento strips and egg slices and sprinkle with the cheese. The rice should be dry, loose and not sticky. Serve with fried ripe plantain slices, a salsa picante and pickled vegetables.

- When you are ready to make your atolillo, drain the rice and add it to a blender with 1 cup of milk. Blend for 3 minutes.
- Strain the rice milk using a muslin cloth or a nut-milk bag. (A tight-weave cloth is better, as twisting the top tightly allows more milk to drain through.)
- To a medium saucepan add the strained rice milk, the remaining 2 ½ c of milk, the sugar and 1 cinnamon stick (or 1/2 tsp ground cinnamon). Let the mixture simmer over low heat for 15 minutes, stirring constantly.

- Pepian de Pollo. What better way to start your exploration of authentic Guatemalan cuisine than with pepian de pollo? Often referred to as the national dish, pepian de pollo is a hearty stew that’s packed with spice.
- Enchiladas. You’re probably wondering why enchiladas are on this list, but these are much different from what you’ll get with Mexican cuisine. You won’t find any tortillas stuffed and smothered in a sauce here.
- Guatemalan Chicken in Coconut Milk. Wondering what Guatemalans eat for comfort food? They eat this dish. This meal has everything going for it. It’s got a bed of white rice with adobo chicken, sauteed veggies, and a creamy coconut sauce.
- Pulique. Are you a fan of juicy chicken? Then step right up because you’ll want to feast on this dish. Pulique is a staple that is typically enjoyed during rituals or festivals.
- Guatemalan Rice Pilaf. What sets Guatemalan rice pilaf apart from all the rest is a medley of vegetables, simple spices, and chicken stock. Each home has its own variation, but I like how this traditional recipe keeps it simple.

- Combine 1 ½ cups of bean broth liquid (see below for instructions on cooking black beans) with ½ cup of cooked black beans in a blender or food processor and blend until very smooth. You should have 2 cups of liquid.
- Heat the vegetable oil in a skillet over medium-high heat, add the chopped onion and saute for one minute.
- Add the raw rice and saute for two minutes stirring continuously so it gets brown but doesn't burn.
- Add the chopped red pepper (reserve a tablespoon for garnish), salt, thyme (if using) and black bean puree. Bring to a boil, cover, reduce heat to very low and simmer gently for 15 minutes or until the rice has absorbed all of the liquid.
