LAMB BURGERS WITH TZATZIKI AND GRILLED ONION

- Prepare a grill for indirect heat. If using a charcoal grill, build the hot coals on one side only. If using a gas grill, heat one side only to medium-high heat.
- Combine the lamb, coriander and 3 tablespoons of the mint in a large bowl. Form the mixture into 4 patties. Season with salt and pepper. Place the patties on the hot (direct heat) side of the grill, directly over the coals. Grill until nicely browned, 3 to 5 minutes per side. Move the patties to the cool (indirect heat) side of the grill.
- Drizzle the onion slices with oil and season with salt and pepper. Place on the hot (direct heat) side of the grill and cook until softened and charred, 3 to 4 minutes, moving the slice over to the cool (indirect heat) side to finish cooking if needed.
- For the tzatziki, combine the yogurt, cucumber, dill, lemon zest and garlic and remaining 1 tablespoon mint in a medium bowl. Season with salt and pepper.
- To serve, spoon some tzatziki onto a roll, top with a burger and a slice of grilled onion and close the roll.
GYROS BURGERS
This is a Greek/American lamb and beef mixture version of the traditional Greek pork or lamb Gyros (or Gyro). Serve on warm pita bread with tzatziki sauce, and thinly sliced onion, tomato and lettuce.

- Preheat an outdoor grill for medium-high heat, and lightly oil grate.
- In large bowl, combine ground beef, ground lamb, onion, garlic and bread crumbs. Season with savory, allspice, coriander, salt, pepper and cumin. Knead until mixture is stiff. Shape into 4 very thin patties (1/8 inch to 1/4 inch thick).
- Cook patties for 5 to 7 minutes on each side, or until cooked through.

- Combine yogurt, shredded cucumber, garlic, mint, vinegar, salt and pepper in a small container. Cover and refrigerate.
- Combine beef, oregano, feta cheese, onion powder, garlic, salt and pepper in a bowl. Form into 4 patties.
- Grill patties on each side until desired doneness is reached.
- Grill pitas for a minute or two on each side to warm.
- Assemble sandwiches - open pitas, add burger, a dollop of sauce, and any of the sliced vegetables listed above for garnish. Enjoy!

- Preheat the grill. Preheat your grill for direct grilling at medium-high heat (around 350-400 degrees F).
- Prepare your condiments. To make the tzatziki sauce, place the grated cucumber in a paper towel and press to remove moisture. Combine the dried cucumber with Greek yogurt, lemon juice, salt, grated garlic, onion powder, and white pepper. Stir and then refrigerate until ready to serve. To make the mint sauce, combine the mint, parsley, lemon juice, garlic, salt, pepper, red pepper flakes, and olive oil in a blender with a tight-fitting lid. Blend until there are no large pieces of garlic or herbs remaining, but not quite a totally smooth puree.
- Make your lamb burger patties. In a large mixing bowl, combine the ground lamb, breadcrumbs, eggs, curry powder, salt, and pepper. Mix gently with your hands until the seasoning is well distributed through the meat and then form 6, 1/3 pound, patties.
- Grill the burgers. Place the lamb burger patties directly on the grill grates, close the lid, and grill for about 4-5 minutes. Open the lid and flip the patties, being careful not to press or squish them with your spatula. Close the lid and continue cooking until the lamb reads 155 degrees F. Transfer the lamb burgers to a plate and cover lightly with foil so the carry-over cooking will take the lamb up to 160 degrees F.
