CUMIN-SEARED HALIBUT WITH SWEET CORN SAUCE
Northern Pacific halibut is my fish of choice to have in the warmer months. It is a flat fish and deserves special care when handling. Since it can be a little more expensive, I save it for special occasions. The sauce relies on corn, which is very important to Native American culture and recipes. Use blue corn if you can get ahold of it. Otherwise, sweet corn is a great go-to.

- For the sweet corn sauce: In a medium heavy-bottomed saucepan, add the canola oil, onions, garlic, thyme, bay leaf, salt and pepper. Sweat on medium heat, stirring occasionally, until the onions are softened, 7 to 10 minutes. Add the wine, if using, and cook until it evaporates, about 5 minutes.
- Add the corn kernels, reserved cobs and stock. Bring to a boil over medium-high heat, then reduce the heat to medium and cook for about 10 minutes.
- For the halibut: Meanwhile, in a large plastic bag, combine 5 teaspoons of the canola oil, the cumin, lemon zest and juice, salt and pepper with the halibut fillets and allow to marinate in the refrigerator for 30 minutes.
- Discard the corn cobs, thyme and bay leaf from the sauce. Carefully pour the mixture into a blender and puree on high speed for 4 to 5 minutes. The natural starches will activate and thicken the sauce. Pour the sauce through a fine-mesh sieve into a clean saucepan. Simmer over low heat until it reduces by half, about 15 minutes.
- To finish the halibut, in a medium sauté pan, heat the butter and remaining 3 teaspoons canola oil over high heat until the butter melts and the oil is hot (a little smoke indicates it's ready). Place the halibut fillets in the pan skin-side up and cook until a nice crust forms on the bottoms, about 4 minutes. Carefully flip the fillets and cook 3 minutes more. Lower the heat and continue to cook until the internal temperature registers 140 degrees F, about 4 minutes. Let rest, covered with foil, for a few minutes. Serve topped with the sweet corn sauce.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.
- In a small bowl, mix together mayonnaise, mustard, horseradish, and lemon juice. Stir in 1/4 cup bread crumbs and 1 tablespoon Parmesan cheese. Arrange fish fillets on the prepared baking sheet. Spread bread crumb mixture evenly over fish.
- In a small bowl, mix together melted margarine, 1/4 cup bread crumbs, and 1 tablespoon Parmesan cheese. Sprinkle over the coated halibut.
- Bake for 15 to 18 minutes, or until fish flakes easily with a fork.

Steps:
- Arrange fish in a large shallow baking dish.
- Combine orange juice and next 5 ingredients in a small bowl and mix well.
- Pour over fish steaks, cover and marinate in refrigerator for 1 hour, turning once.
- Remove steaks from marinade and reserve marinade.
- Combine reserved marinade, olive oil and mustard in small saucepan and bring to boil.
- Add onion, capers and parsley and reduce heat to simmer for 5 minutes.
- Place halibut steaks on broiler pan sprayed with nonstick cooking spray and brush with sauce.
- Broil for 5 minutes.
- Turn, brush with sauce and broil an additional 3 minutes or until fish flakes easily with fork.
- Spoon remaining sauce over fish or serve on the side.

- OVEN COOKING:.
- Rinse halibut in cold water and dry using paper toweling.
- Arrange halibut in a 9" x 13" oven-proof baking dish.
- Preheat oven to 400 degrees Fahrenheit.
- In a frying pan, add butter, onion and garlic. Saute until translucent.
- Remove from heat; stir in parsley, orange rind, salt and pepper.
- Spread mixture over halibut steaks.
- In a small bowl, mix together orange juice and lemon juice.
- Sprinkle juice over steaks, but be careful not to wash away the onion/garlic mixture.
- Bake fish in preheated 400 degree Fahrenheit oven for 20 to 22 minutes, turning over at about 10 minutes of cooking time.
- Continue cooking until time expires or until fish flakes easily with a fork.
- DO NOT OVERCOOK FISH.
- Spoon hot juices over fish.
- Serve at once.
- MICROWAVE COOKING:.
- Prepare and arrange fish and onion/garlic as above.
- Reduce orange juice by 2 tablespoons.
- Cover fish with a clear plastic wrap vented.
- Cook on HIGH (full power) for 4 minutes.
- Turn fish over and cook for an additional 3 to 4 minutes on HIGH (full power) or until fish flakes easily with a fork.
- Spoon juices over fish and serve at once.
- If desired, serve with Tartar Sauce.

- Place each fillet in an individual broiler-proof serving dish. Sprinkle with salt and pepper. Melt 2 teaspoons butter; drizzle over fillets.
