SAUERKRAUT SALAD

Great-Grandma Maida Dixon made this salad for family gatherings. I think of her every time I make. It's sooo good. It needs to be placed in the refrigerator to allow the flavors to meld. It really is worth the wait.

Sauerkraut Salad image

Steps:

  • In a large bowl, mix together sauerkraut, onion, celery, green bell pepper, carrot, pimientos, and mustard seed. Set aside this mixture.
  • In a small saucepan, mix together sugar, oil, and vinegar. Bring to a boil. Remove from heat.
  • Pour sugar mixture over salad, cover, and leave it in the refregerator for 2 days before serving.

½ cup cider vinegar

Sauerkraut Salad With Ham image

Steps:

  • Rinse and drain sauerkraut; chop coarsely.
  • Wash grapes and cut in half; remove seeds if desired.
  • Cut ham in julienne strips.
  • Gently mix these 3 ingredients.
  • Blend dressing ingredients and stir into sauerkraut mixture.
  • Marinate for 10 minutes; adjust seasoning before serving, if necessary.

Steps:

  • Rinse sauerkraut in a colander and drain well. Place in serving bowl.
  • Add ham, celery, green pepper and onion.
  • Combine sugar, and vinegar in a small bowl. Stirr untill sugar is almost dissolved. Add apples and toss well, pour over sauerkraut.
  • Toss and season to taste with salt and pepper.
  • Serve chilled.

Steps:

  • Combine Ham and Water (enough to cover just the bottom of the pot) in slow cooker. Cook on low for 6 hours or high for 3 hours.
  • After 6 hours on low or 3 hours on high, remove bone from ham (ham should be falling off of bone) and add sauerkraut. Continue to cook on low for about 4 hours. (You could add small red potatoes or diced potatoes at this time as well.).
