I decided to try this recipe on my card club, and it was a big success. They loved it. This ham pickle roll up recipe can be swapped around and changed in so many different ways and always turns out as an awesome appetizer or great-looking centerpiece over a hand of cards.

Steps:

In a small bowl, combine cream cheese and dressing mix. Spread over ham slices. Place a pickle on each ham slice. Roll up tightly; wrap in plastic. Refrigerate for at least 1 hour or until firm. Cut each wrap into six slices.

Ham, Cheese, and Pickle Skewers image

Steps:

Soak 8 wooden skewers in water for 30 minutes.
Heat grill to high. Sprinkle 2 or 3 tablespoons cheese down the center of each slice of ham. Fold in sides to almost fully enclose cheese, then press down, and roll up ham lengthwise.
Carefully thread 1 pickle slice, and 1 ham bundle, making sure ham is secure, then another pickle slice onto each skewer. Lightly brush pickles and ham with oil, and grill, flipping, until cheese melts and grill marks appear, about 2 minutes per side.

8 slices cooked ham (8 ounces)
Vegetable oil, for brushing
1 large dill pickle, cut into 1/2-inch-thick half-moons

Steps:

Finely slice the red onion and radishes and put in a small bowl with the red wine vinegar and caster sugar and leave to lightly pickle for 20 mins. Mix the mayo with the mustard and spread onto the white bread. Top two slices with the smoked ham, parsley and cheddar. Drain the onions and radishes and lay on top. Close and halve to serve.

Steps:

Smear both sides of bread slices with mayonnaise. Combine cheeses in a bowl. Sprinkle 4 slices bread with half of cheese mixture, dividing equally. Top each with 3-4 pickles. Divide prosciutto among sandwiches; top with remaining cheese. Cover with remaining bread.
Melt 2 tablespoons butter in each of 2 large heavy skillets over medium-low heat. Add 2 sandwiches to each skillet and cook until bread is golden, 9-10 minutes. Add 1 tablespoons butter to each skillet, flip sandwiches, and cook until bread is golden and cheese is melted, 9-10 minutes longer.
