HAM SPREAD

This recipe uses leftover ham with onion and dill pickle relish for a delicious sandwich spread or dip for crackers. You can substitute 10 green olives with pimentos for the dill pickle relish.

Steps:

  • Cut up ham to put into food processor, grind on pulse until very coarse. Add the onion and dill pickle relish close to the end of this stage. Put into mixing bowl and add mustard and creamy salad dressing; mix well.

SPICED HAM WITH APPLE RELISH

If you think Thanksgiving turkey tastes good as a leftover, try this. The ham's wonderful served cold on a bun with hot or cold relish spooned on the top. Spiced Ham with Apple Relish image

Steps:

  • Combine cloves and allspice; rub over ham. Wrap tightly in foil and place in a shallow baking pan. Bake at 325° for 1 to 1-1/2 hours or until a thermometer reads 140° and the ham is heated through., In a large saucepan, combine the first six relish ingredients. Bring to a boil, stirring constantly. Reduce heat; simmer for 25-30 minutes or until thickened. Stir in almonds. Slice ham; serve with the relish.

Steps:

  • Place the apple in a small saucepan with one tablespoon water.
  • Cook over medium heat until tender but not mushy, about 5 minutes.
  • Cool completely.
  • In a large bowl, combine the ham and pepper relish ( "Red Pepper Relish" Recipe #239180 ).
  • Stir in the apple and blend well.
  • Cover and chill well before serving.

HONEY-GLAZED HAM WITH CRANBERRY RELISH

A tangy cranberry-pecan relish adds a festive touch to a honey-glazed spiral sliced ham.

Honey-Glazed Ham with Cranberry Relish image

Steps:

  • 1. Remove and discard glaze packet from ham or reserve for another use. Begin by preparing ham according to package directions.
  • 2. Make Honey Glaze: While baking, mix honey, mustard and lemon juice in small bowl until blended. Set aside until the last 30 minutes of baking time.
  • 3. Make Cranberry Relish: Combine apples and juice in medium saucepan. Bring to a boil over medium heat. Reduce heat to medium-low; simmer 5 minutes, stirring occasionally. Add cranberries; simmer an additional 5 minutes, or until fruit is tender, stirring occasionally. Remove from heat; stir in marmalade and pecans. Set aside until ready to eat. Or, if made in advance, cover and refrigerate until ready to use.
  • 4. Uncover ham and brush with the Honey Glaze for the last 30 minutes of the baking time.
  • 5. Let stand 10 minutes. Carve and serve with Cranberry Relish.

1 Cook's® Bone-in Spiral Sliced Half Ham (about 9 pounds)
1/2 cup honey (cranberry honey preferred, if available)
1-1/2 teaspoons dry mustard
1 teaspoon lemon juice
1 large Granny Smith apple, peeled, finely chopped (about 1-1/2 cups)
1 cup cranberry juice cocktail
1 package (6 ounces) sweetened dried cranberries (about 1-1/3 cups)
2 tablespoons Orange Marmalade
1/4 cup chopped pecans

Iberian Ham with Tomato Relish image

Steps:

  • Combine the vinegar and sherry in a saucepan and bring to a boil. Add the diced vegetables and salt and pepper, bring back to a boil, and reduce to a simmer. Cook, uncovered, until thick, about 20 minutes. Adjust seasonings and let relish cool. To serve, coat a large platter or individual plates with relish. Top with the Iberian ham slices. Leftover relish will keep in the refrigerator for a few weeks.

3/4 cup Jerez vinegar
1 cup Pedro Jimenez sherry
2 pounds tomatoes, peeled and seeded, finely diced
1 green bell pepper, seeds removed, finely diced
1 red bell pepper, seeds removed, finely diced
6 shallots, finely diced
Salt and freshly ground black pepper
